@ Process for treating relatively light-colored dates grown domestically to impart thereto the relatively darker appearance, the flavor, the soft-chewy texture and the shelf-stability of imported dates grown in the Middle East region. The process involves steaming domestic dates at a temperature of at least 175 ° and for a period of time which is sufficient to darken the domestic dates throughout to substantially the same darkness as that of imported dates. The steamed domestic dates are then dried to provide shelf-stable, treated dates. At no time before or during the process is a liquefied composition containing water and an effective amount of at least one saccharide sugar sweetening agent applied to or contacted with the domestic dates. The size and shape of the shelf-stable, treated dates are substantially the same as the size and shape of the starting domestic dates. Domestic dates are generally of the sucrose-type dates, whereas the imported dates are generally of the inverted-sugar type dates.

Edible paste enters an apparatus at an inlet. A nut holds the Inlet coupled to another supply pipe. A portion of the nut is threaded. The area of the inlet is approximately equal to the area of a slit-like opening, the filling material or edible paste passing through the slit and into an opening in a block. A second block has a plurality of valves therein, the valves being simple plug valves, and having a single bore therethrough. Paste is extruded through nozzles fixedly connected to a third block, and paste is extruded into rows upon a moving bed of a lower half portion of a continuous sheet of " shredded wheat" in its uncut form. The paste is laid in rows of five across, and a second sheet of uncut shredded wheat is laid atop the first layer, trapping the rows of paste. The resulting product when cut forms the familiar shredded wheat biscuit shape. The finished product contains raisin paste.

@ Methods and apparatuses are described for manufacturing, from a coextrusion, food pieces wherein an inner food is fully or partially enrobed by an outer food. In one embodiment the inner food is a dough that is enrobed by an outer dough by severing the outher dough with a blunt severing edge on a severing element which, as it enters the coextrusion, simultaneously draws the outer dough over the inner dough on both sides of the element to form the food piece. A coextrusion of an inner dough inside and outer dough is formed below a die with the extrusion of the inner dough periodically interrupted to form a region in the coextrusion where there is a greater amount of outer dough. A pair of severing elements are operatively located at a predetermined distance below the die where convergence of the severing elements cuts the extrusion in a region having a greater amount of outer dough while simultaneously drawing the outer dough over the inner dough above and below the severing elements. Several embodiments are described.

This invention relates to a process for screening of microorganisms for the production of glucose-2-oxidase. Microorganisms capable of glucose-2-oxidase synthesis and growing on the surface of a solid medium are detected by reaction of glucosone (arabino-2-hexosulose), or hydrogen peroxidase surrounding each microorganism with an analytically indicatable reagent. The process is particularly useful for the early detection of glucose-2-oxidase activity in slow growing strains of microorganisms such as Basiciomycetes.
