Method for fixation of cut up carcasses of slaughter hogs (3), which are suspended at their hind legs and which have been eviscerated after the cutting, during which fixation in particular the spinal column of the hog is aligned relative to the median plane of the carcass by means of a member (10) clutching the snout of the animal, said member exerting a downwards pull to stretch out the animal during the cutting of the carcass, or for processes requiring a similar fixation. To attain an exact fixation of the pelvic region of the carcass independent of imbalances in the suspension of the legs, a method has been suggested which comprises the following steps: a measuring of the level, at which the public bone (16) of the carcass is placed; introduction under the pubis bone (16) of the carcass of a carrier means (15) having a pair of fingers which can spread out in a horizontal plane by a movement away from each other and which are adapted, when raised, to get into contact with the pubic bone and then to lift the pelvic region of the carcass in relation to the measured level prior to or in connection with the stretching of the carcass. Moreover, an apparatus for the splitting of carcasses by use of the method is provided.

A process of eviscerating an inverted animal carcass (10) inclined at 35° to 40° includes pushing the viscera (30) comprising both the thoracic viscera (31) and abdominal viscera (32) in a direction (B) from the cranial end (11) of the carcass (10) towards the caudal end (12) so as to pass between the hind legs (13) and fall from the carcass. Connecting tissues including the aorta (35) and external iliac arteries (36) are partially severed prior to pushing the viscera from the carcass so that the viscera detaches completely from the carcass after being pushed between the hind legs (13). The diaphragm (25) may be pierced at its periphery so that the force of the pushing operation causes the diaphragm to tear around its peripheral edges from the walls of the thoracic cavity. The pubic symphysis (60) is split before the pushing operation whereby the viscera (30) can pass both above and below and through the split in the pubic symphysis (60). Alternatively, the pubic symphysis (60) need not be split prior to the pushing operation whereby the viscera (30) travels over the pubic symphysis (60). A pushing member (41) commences to push on the thoracic viscera (31) at about the fifth rib and travels at 0.5 to 0.6 metres per second.

An apparatus for removing a bone from a piece of meat lying upon a horizontal supporting surface (43), e.g. the shoulder blade (41) of the fore end of a pig carcass (40), which apparatus comprises an essentially vertical driving cylinder (30), the piston rod (31) of which is connected with a gripping device (32). This device may be brought into engagement with the neck of the shoulder blade and exert an upward pull in this by actuating the driving cylinder (30). Parts of the piece of meat outside the shoulder blade, such as the humerus (42) adjacent to the shoulder blade, may fir tightly against a stop member (33) during the upward pull of the driving cylinder (30) in the bone. The gripping device (32) and the piston rod (31) of the driving cylinder, connected with the gripping device, have a vertical travel which is longer than the length of the shoulder blade which is to be removed, e.g. the double length. The stop member (33) may be provided with a wedge which goes down into the joint between the shoulder blade (41) and the humerus (42). It cuts through the sinews at the head of the shoulder blade when the piston rod (31) of the driving cylinder exerts an upward pull in the neck of the shoulder blade. After that, the horizontal part of the stop member (33) will fit tightly against the humerus (42). By the upward pull of the piston rod in the neck of the bone the head of the shoulder blade will be loosened from the meat, and by the continued upward pull the shoulder blade will then be removed entirely from the fore end by one stroke of the cylinder (30). By means of the apparatus an operator is able to remove a large number of shoulder blades from fore ends of pigs without being strained by physically demanding movements. The only prerequisite for using the apparatus is a slight manual pre-treatment of the fore ends.

With the purpose of obtaining an automatized cutting process to free the rectum of animals, which may vary as to size and also be individually different, the method is characteristic in that the carcass is fixed with respect to a vertical plane through the axis of the knife (10), that the hind part of the carcass is fixed with respect to a vertical plane perpendicular to the first plane, that a linear sensor (20) parallel with the second plane is moved downwards in a substantially vertical direction in such a distance from the second plane that it hits the root of the animals tail, and that the rotating knife (10) is adjusted to a predetermined position with respect to the sensor (20) when it is hitting the root of the tail, after which the sensor (20) is moved to an inactive position out of the way of the knife (10), whereafter the cut is made.

The device is intended for implementation in a high-speed industrial slaughterhouse.
