A method and apparatus for removing a portion of fat from meat cuts involves placing a meat cut on a longitudinal conveyor, pressing sensor probes into the meat cut to measure the relative thickness of fat and the location of lean in the meat, and then withdrawing the sensor probes from the meat. An electronic signal is transmitted from the sensor to a controller along with an encoder signal to determine the depth from the outer lower surface of the meat cut through a layer of fat in the meat to a layer of lean in the meat. Data taken from the foregoing step determine the desired position of the blade, which removes the appropriate amount of fat to be removed from the meat cut.

The invention concerns a device for the gripping and retention of part of a split carcass by the spinal column (17), and the conveyance of that part essentially in the lengthwise direction of the spinal column, while retaining it by the spinal column during processing of the carcass part by means of cutting tools. The device comprises a mainly rectilinear conveyor (10) with retention elements (11) connected as links in an endless chain, with each element having a first section (21) with a contact surface (22) for a first side of the spinal column and a second section (25) with a pressure surface (26) for a second side of the spinal column. The two sections of each element are designed to allow the contact surface (22) and the pressure surface (26) to be relatively moved towards and away from each other in a direction across the conveyor's direction of conveyance. The spinal column can be gradually gripped and clamped between the surfaces (22, 26) when the contact surface (22) and pressure surface (26) are successively, element by element, moved towards each other. The device provides a firm grip between the spinal column and the machine parts of an apparatus for processing of e.g. fore-ends or middles.

Apparatus for recovering meat from the head (10) of a slaughtered animal is disclosed. A jaw support (15) clamps and supports the head by clamping the jaw (12). Cheek pullers (20) having clamps (21) engage with and hold the cheeks (13) of the animal head (10) in the vicinity of the mouth. A drive arrangement (30) has a lateral drive (31) for moving the cheek pullers (21) outwardly away from each other and has a posterior drive (33) for moving the cheek pullers (21) in the posterior direction (A) so as to pull tissues from both the jaw (12) and the skull (11). A jaw separation means (40) comprises a snout ring (42) to be fitted to the snout of the skull (11) and a drive (33) moves the snout ring (42) so as to move the skull (11) relative to the jaw (12) with an at least partially arcuate path of movement so as to continue to open the mouth wider as or after the cheek meat (13) is removed from the animal head (10).

Method for fixation of cut up carcasses of slaughter hogs (3), which are suspended at their hind legs and which have been eviscerated after the cutting, during which fixation in particular the spinal column of the hog is aligned relative to the median plane of the carcass by means of a member (10) clutching the snout of the animal, said member exerting a downwards pull to stretch out the animal during the cutting of the carcass, or for processes requiring a similar fixation. To attain an exact fixation of the pelvic region of the carcass independent of imbalances in the suspension of the legs, a method has been suggested which comprises the following steps: a measuring of the level, at which the public bone (16) of the carcass is placed; introduction under the pubis bone (16) of the carcass of a carrier means (15) having a pair of fingers which can spread out in a horizontal plane by a movement away from each other and which are adapted, when raised, to get into contact with the pubic bone and then to lift the pelvic region of the carcass in relation to the measured level prior to or in connection with the stretching of the carcass. Moreover, an apparatus for the splitting of carcasses by use of the method is provided.
