The invention relates to a method for increasing the content of polyunsaturated long-chained fatty acids in an organism, by introducing nucleic acid coding for polypeptides and/or proteins having phopholipase, ketoacyl-CoA-reductase and/or dehydratase activity into the organisms. Advantageously, said enzymes stem from ostreococcus or thraustochytrium. The invention also relates to nucleic acid sequences, nucleic acid structures, vectors and organisms containing the inventive nucleic acid sequences, vectors containing the nucleic acid sequences and/or the nucleic acid structures, and transgenic organisms containing the above-mentioned nucleic acid sequences, nucleic acid structures and/or vectors. Advantageously, said above-mentioned nucleic acid frequencies, nucleic acid structures and vectors can optionally be expressed in the organism along with additional nucleic acid sequences coding for the polypeptides and/or proteins of fatty acids or lipid metabolism biosynthesis. Another advantage of the nucleic acid sequences of the fatty acids or lipid metabolism is that they are coded for Δ-9 elongase, Δ-8-desaturase, a Δ-5-desaturase, Δ-4-desaturase, Δ-12-desaturase, Δ-5-elongase and/or Δ-6-elongase activity. The invention relates to a method for producing arachidonic acid and/or eicosapentaenoic acid in useful transgenic plants, according to which nucleic acids, which encode polypeptides with Δ-6-desaturase activity, Δ-6-elongase activity or Δ-5-desaturase activity, are introduced into the plants. As an added advantage, a gene that encodes a Δ-3-desaturase is expressed in the useful plants. In an additional embodiment of the method, additional nucleic acid sequences, which encode polypeptides involved in the biosynthesis of the fatty acid or lipid metabolism, can be expressed in the plants. Particularly advantageous nucleic acid sequences are those that encode Δ-8-desaturase activity, Δ-12-desaturase activity, Δ-15-desaturase activity, Δ-4-desaturase activity, Δ-9-elongase activity and/or Δ-5-elongase activity. The invention relates to a method for the production of multiply-unsaturated fatty acids in an organism, into which nucleic acids have been introduced, which code for polypeptides with Δ-5 elongase activity. Said nucleic acid sequences, optionally with further nucleic acid sequences, coding for polypeptides for the biosynthesis of fatty acids and lipid metabolism, are advantageously expressed in the organism. Nucleic acid sequences coding for a Δ-6 desaturase, a Δ-5 desaturase, Δ-4 desaturase and/or Δ-6 elongase activity are particularly advantageous and, advantageously, said saturases and elongases are derived from Thalassiosira, Euglena or Ostreococcus. The invention further relates to a method for the production of oils and/or triacylglycerides with an increased content of long-chain, multiply-unsaturated fatty acids. A particular embodiment of the invention is a method for the production of unsaturated ω-3 fatty acids and a method for the production of triglycerides with an increased content of unsaturated fatty acids, in particular, of Δ-3 fatty acids with more than three double bonds.
