The present technique provides a method for producing plant-base drinks or foods and a method for reducing saccharides in plant-base drinks or foods, which include a step for causing a maltotriose-generating enzyme to act on a plant-base raw material. In the production method according to the present technique, a step for causing a carbohydrate oxidase to act on a plant-base raw material can be further performed. The present technique also provides an enzymatic agent that is for reducing saccharides and that contains a maltotriose-generating enzyme. The enzymatic agent for reducing saccharides according to the present technique can further contain a carbohydrate oxidase.

Provided is a ketoreductase mutant and applications thereof. Compared with an amino acid sequence shown in SEQ ID NO: 1, the amino acid sequence of the ketoreductase mutant includes at least one of the following mutation sites: L198P, S96W/I/L/V, M194L or L1526, herein "/" means "or." The ketoreductase mutant provides high selectivity and high activity with respect to a substrate ketone, and the application of the mutant in a catalytic reduction reaction of a ketone substrate may increase the production efficiency of a chiral alcohol compound corresponding thereto.

According to the present invention, a laccase having an amino acid sequence of a laccase derived from Paramyrothecium sp., and a laccase having a sequence that is similar thereto and that includes said amino acid sequence as the basic backbone exhibit excellent activity in pH ranges including the alkaline range.

Disclosed in the present invention are an imine reductase mutant, and a method for preparing (S)-nicotine using the imine reductase mutant. The first objective of the invention is to provide an imine reductase mutant, for solving the problems in the prior art that no nicotine of S configuration can be obtained by using an enzyme and the enzyme activity is low, and this mutant can implement catalytic reduction of a substrate myosmine or 4-(Methylamino)-1-(pyridin-3-yl)butanone to (S)-nicotine. The second objective of the present invention is to provide a coexpressed enzyme of the imine reductase and a glucose dehydrogenase, specifically being a coexpressed enzyme of an imine reductase mutant enzyme and the glucose dehydrogenase. The co-expressed enzyme is used to prepare (S)-nicotine, and the cost of enzymatically preparing (S)-nicotine is lowered.

The modified luciferase polypeptide has at least 60% amino acid sequence identity to a wild-type Oplophorus luciferase and includes at least one amino acid substitution at a position corresponding to an amino acid in a wild-type Oplophorus luciferase of SEQ ID NO: 1. The modified luciferase polypeptide has at least one of enhanced luminescence, enhanced signal stability, and enhanced protein stability relative to the wild-type Oplophorus luciferase.
