The present invention relates to a pre-evisceration device and a method for preparing the evisceration of beheaded slaughtered poultry, wherein the viscera pack is to be eviscerated from the vent end. A neck slitting knife makes a neck slit along the neck at the breast side of the poultry. A pre-evisceration release tool is adapted to be inserted via the neck slit between the esophagus and trachea and the naturally surrounding tissue, and to be moved along the neck to loosen at least part of the trachea and esophagus adhering to the neck. The pre-evisceration tool releases, prior to evisceration, part of the esophagus and trachea at the neck side of the crop between a position adjacent the crop, at the neck side thereof, and the neck opening.

An offal removal station 10 for use in an automated meat processing line comprises an inlet for shackled joints to enter the station and an outlet for processed shackled joints. Between the inlet and outlet is a means 12 for increasing the relative distance between the paired joints travelling therethrough and/or for at least partially restraining a joint portion. An offal removal means 13 is arranged to engage a joint as it travels through the joint handling means 12. The distance between the paired joint may be only temporarily increased by the joint handling means 12. Also disclosed is a continuous method of removing offal from a joint comprising applying a vacuum to, or in the vicinity of, the joint to remove said offal. The offal removal station or the continuous method may relate to removing kidney tissue from a thigh joint of poultry.

The drumstick has first and second opposing sides where no fibula extends and opposing third and fourth sides along one of which the fibula extends. The method includes suspending the drumstick from its ankle joint, moving the suspended drumstick in a downstream processing direction, cutting the meat and tendons extending along the first side of the drumstick, cutting the meat and tendons extending along the second side of the drumstick, pushing and stretching the meat and tendons of the drumstick to form a bulge projecting in the direction of the third side of the drumstick, cutting through the meat and tendons within the bulge while insuring that the cut is not made completely to the tibia, orienting the suspended drumstick so that its fourth side faces in the direction of a knife blade, pushing and stretching the meat and tendons of the drumstick to form a bulge projecting in the direction of the fourth side of the drumstick, and cutting through the meat and tendons within the bulge while insuring that the cut is not made completely to the tibia. An apparatus for carrying out the method also is disclosed.
