The present invention aims to provide a particulate composition containing anhydrous crystalline 2-O- α -D-glucosyl-L-ascorbic acid having a significantly, hardly solidifiable property compared to conventional ones in a grade for use in quasi-drugs; a process for producing the same; and uses thereof. The present invention solves the above object by providing a particulate composition containing anhydrous crystalline 2-O- α -D-glucosyl-L-ascorbic in an amount of over 98.0% by weight but less than 99.9% by weight, on a dry solid basis; or a degree of crystallinity of 90% or higher for anhydrous crystalline 2-O- α -D-glucosyl-L-ascorbic acid, when calculated based on a profile of powder X-ray diffraction analysis of the particulate composition, and a dynamic vapor sorption level of 0.01% by weight or lower, when kept at 25°C under a relative humidity of 35% by weight for 12 hours after removal water in the particulate composition under nitrogen gas stream; and by providing a process for producing the same and uses thereof.

A process for producing isoquercitrin, α-glycosylisoquercitrin, and rhamnose, characterized in that in yielding isoquercitrin from rutin, the step of treatment with an enzyme having naringin decomposition activity is conducted in the presence of an edible ingredient such as gelatin, starch gluten, chitosan, lecithin, a glycerol/fatty acid ester, or xanthane gum. By the process, isoquercitrin and α-glycosylisoquercitrin, which are useful as an antioxidant, fading inhibitor, flavor deterioration inhibitor, or the like, can be produced in high yield.

The present invention provides a method for producing isoquercitrin, ±-glycosylisoquercitrin, and rhamnose, the method comprising a step of naringin-degrading enzyme treatment during the isoquercitrin production from rutin in the presence of an edible component, such as gelatin, wheat gluten, chitosan, lecithin, a glycerol fatty acid ester, xanthan gum, carrageenan, sodium chondroitin sulfate, casein, enzymatically decomposed gelatin, sodium alginate, konjac extract, gellan gum, guar gum, soybean protein, agar, pectin, yeast extract, egg-white peptide, cluster dextrin, gum arabic, arginine, sodium metaphosphate, karaya gum, locust bean gum, sodium pyrophosphate, glucosamine, chitin, sodium glutamate, dextrin, trehalose, or a grain-based food ingredients. According to the present invention, isoquercitrin and ±-glycosylisoquercitrin, which are of use as antioxidants, anti-fading agents, flavor change inhibitors, etc., can be produced in enhanced yields.
