    Abstract: PROBLEM TO BE SOLVED: To provide a method for producing an alkyl ester in an industrially performable scale suppressed in lipase inactivation as far as possible and having high cost performance. SOLUTION: The method comprises (1) preparation of a first solution by mixing an oil and fat source containing a triglyceride or a carboxylic acid with a first primary alcohol or a first secondary alcohol in a first organic solvent (each molecule of the first organic solvent contains 4-8 carbon atoms and one hetero atom), (2) production of a first alkyl ester by reacting the triglyceride or the carboxylic acid with the first primary alcohol or the first secondary alcohol in the presence of a first lipase (the first solution does not generate phase separation from the beginning to the end of the reaction) and (3) separation of the first alkyl ester from the first solution.
