PROBLEM TO BE SOLVED: To provide a system for automatically obtaining a large amount of a natural polymer (useful polysaccharide) from a natural raw material in a short time. SOLUTION: The system (1) for extracting and purifying the natural polymer compound comprises an extraction device (2) for stirring a mixture of a natural material (160) with an extraction solvent (162) and simultaneously extracting the natural polymer compound contained in the natural material (160), and a purification device (4) for purifying the natural polymer compound extracted from the extraction device (2). The extraction device (2) comprises an outer tank (10) for receiving the extraction solvent (162), an inner tank (46) which has a plurality of communication holes (64) enabling the passage of the extraction solvent (162), receives the natural material (160), and is fixed to the inside of the outer tank (10) concentrically with the outer tank (10), and a rotation means (40) for normally or reversely rotating the inner tank (46) fixed to the outer tank (10). PROBLEM TO BE SOLVED: To provide a method for industrially and efficiently producing highly pure astaxanthin without affecting a production amount of chitin in a process for producing chitin from shells of crabs and shrimps.SOLUTION: In the process for producing chitin from shells of crabs and shrimps, after removing calcium by hydrochloric acid soaking performed therein, ethanol is added to the shells of crabs and shrimps washed with water without carrying out neutralization so that a final concentration of ethanol becomes not higher than 70%. Astaxanthin is extracted by soaking the shells of crabs and shrimps in the solution for several hours while heating the solution. An extract and the shells of crabs and shrimps are separated from each other, and the shells of crabs and shrimps are returned to the process for producing chitin. After a deproteinization process of soaking in a sodium hydroxide solution, chitin is produced. When ethanol is removed by reduced pressure treatment after adding edible oil to the extract containing astaxanthin, astaxanthin is dissolved and spread in the edible oil, and then, an edible oil layer is collected to obtain an astaxanthin-containing oil.

PROBLEM TO BE SOLVED: To rapidly separate an extracted solution characterized in an emulsified state and an insoluble dietary fiber obtained from its residue from a soybean curd refuse, to obtain products having additional values from them and to reduce a cost required for the treatment of a soybean curd refuse. SOLUTION: The protein of a soybean curd refuse is decomposed and hydrolyzed by using an enzyme to give an extracted solution which comprises a peptide, an amino acid, a simultaneously extracted water-soluble dietary fiber, a carbohydrate and a lipid and is characterized in an emulsified state. The residue of an insoluble dietary fiber is immersed in an alkali solution or an acid solution, the enzyme, the protein, the carbohydrate and the lipid not extracted by heating are removed and the obtained insoluble dietary fiber is rapidly separated. The extracted solution is useful as an antifoaming agent during processing of a health food and a food, a burning inhibitor, an emulsion stabilizer, a humectant for a cosmetic, etc. The insoluble fiber is useful in a wide field as an extender for various foods and a diet food because of being white and tasteless, mixed with a paper product such as corrugated board, etc., and used. PROBLEM TO BE SOLVED: To provide a collagen peptide-containing solution which is produced from a safety raw material and has a high commodity value. SOLUTION: Crude collagen prepared by deliming fish scales (hard fish scales) is properly hydrolyzed in an aqueous alkali solution containing an alkali salt (e.g. sodium bicarbonate) under a pressurized atmosphere with a pressure slightly lower than 2 atm.
