摘要: A clamp for safely opening oysters and the other molluscs. It works as a pincer to trap an oyster to be pryed open. The clamp consists of two half-shells, hinged together at their rear ends to a closed position forming an oyster receiving enclosure opened at the front to expose the oyster. The bottom half shell is larger than the top half shell so as to receive the latter and thus vary the size of the enclosure to trap oysters of different sizes. The front edge position of the two half shells form outward ribs serving as a hand shield for the users hand, which presses onto the half shells to trap an oyster and hold it firmly while the other hand uses an oyster knife to pry it open.

摘要: This invention is a high speed crab butchering machine that entails several novel features. Crab are transported through the machine by sandwiching their legs between pairs of opposed, resilient-surface endless belts. The distance between belt pairs is varied to accomodate crab of any body width. This is accomplished by making a lengthwise section of the machine slideable on machine-ways. Linear actuators vary the distance between belt-pairs manually or automatically. A rotating cleaving blade removes the carapace and tail and splits the crab body, in one operation. Furthermore, the blade is only activated when a crab is sensed to be in position. This allows the operator to feed the machine at any time and he does not have to concentrate on engaging an indexing mechanism with the crab as in the prior art. Additionally, the belts and blade are electronically torque limited to ensure safety.

摘要: Method and apparatus for opening a mollusk (e.g., oyster) by rapidly cooling said mollusk to a surface temperature of about -100.degree. F. followed by mechanically agitating said mollusk whereby the mollusk shell opens and at least one eye of the mollusk meat is detached from the shell. Subsequent to cooling and prior to agitating, the mollusk can be rapidly immersed in a water bath to raise the surface temperature of the mollusk to no more than about -50.degree. F. Individually quick frozen mollusk meat can be prepared rapidly either as an individual portion of meat or on the half shell.

摘要: A plurality of shucked shellfish are mechanically eviscerated utilizing a series of longitudinally aligned inclined channels, each channel formed of a power-driven roller and adjacent insert rollers, the insert rollers extending generally parallel and longitudinally aligned with each other. The frictional surfaces of the rollers and the spacing between adjacent rollers, or both, are controlled to effectively separate the soft shellfish viscerae from the soft adductor muscle of the shellfish without significant damage to the muscles.

摘要: A sea-going vessel has mounted on its deck a clam processing plant which includes in sequence a steamer, a clam crusher, a seawater washer, a brine separator, an eviscerator and a chill tank. Special valves are constructed to feed and discharge clams from the steamer which prevents the hot high pressure steam in the steamer from being discharged when the valves are open to the steamer interior. The chill tank includes a special construction to minimize the effects of pitch and roll of the deck while the ship is at sea.

摘要: An oyster shell separator deploys a conical, helically ridged, powered point driven in rotation by an electrical motor within a wedge shaped housing. The conical point draws the shells onto a flanged collar selected in dimension to fully separate the shells. From the collar the shell halves are passed along the sides of the housing for collection and sorting.

摘要: A method of preparatory processing of mussles. The mussles are placed in an inner container which is positioned inside an outer container. The inner container has perforated walls and is equipped with perforated tubes which are spaced a certain distance apart. The mussles are heated to about 85.degree. C. inside the container while being maintained in compacted condition whereby they will be able to open to a minimum extent only. The mussles are then cooled and dry-frozen individually. The cooking (processing) liquid may be frozen in cubes, blocks or the like. The liquid is then used in the final preparation of the mussles prior to their consumption.

摘要: A process and apparatus for preparing bivalves for human consumption which includes depositing the bivalves in a fresh salt water bath maintained at a temperature of from about 46.degree. F. to about 54.degree. F. wherein the water is provided from an aquifer of not more than about 200 feet below the surface of the earth at a rate of from about 0.5 to about 2.0 gallons per minute per bushel, and preferably about 1 gallon per minute per bushel. The oxygen level in the fresh salt water is maintained at a level of from about 4 to about 10 ppm. As a result of the present invention, bivalves recovered, even from uncertified waters, can be sufficiently purified for human consumption in 48 hours without degrading the quality of the bivalves.

摘要: A method and apparatus is provided for segregating and separately recovering fractions of a mixture of low density solids and high density solids, such as mixtures of clam shells and free detached clam meat. The mixture of solids is submerged in a laminar flowing stream of liquid which has a specific gravity about the same as that of the low density solids and such that the low density solids are substantially non-buoyant in the liquid. The bottom of the laminar flowing stream of liquid is defined in part by an upper foraminous conveyor surface which is moving in the same direction as the laminar flowing stream. The mixture of solids is flowed across a turbulent zone of rising air bubbles, and low density solids are removed from the top of the liquid and high density solids are removed from the bottom of the laminar flowing stream. Advantageous apparatus embodiments are provided for conducting the method.
