    摘要: A process for producing lactose-free dairy products is suggested, comprising the following steps: (a) Hydrolysis of a starting milk while adding lactase; (b) Nanofiltration of the hydrolysis product for producing a first permeate P1 and a first retentate R1; (c) Reverse osmosis or nanofiltration of the first permeate P1 for producing a second permeate P2 and a second retentate R2; (d) Mixing the first retentate R1 with such an amount of the second permeate P2 and the retentate R2 that a standardized dairy product is obtained, the content of proteins and minerals of which correspond to the one of the starting milk.

    摘要: The invention relates mainly to a method for producing an ingredient having the same functionalities as a melting salt, said method comprising at least one step of extracting citrates contained in a dairy fraction. Preferably, the dairy fraction is a milk serum. Advantageously, the step of citrate extraction is carried out by passing a milk serum through an anionic column and recovering the anionic eluate loaded with citrates. The anionic eluate loaded with citrates is then concentrated, mixed with a drying base, then dried, in order to obtain an ingredient in powder form.

    摘要: A process and apparatus for producing a sterile milk product from raw milk is disclosed. After separation, the skim milk portion is conducted to a primary filter assembly having a plurality of microfiltration units arranged in series. Bacteria having a size larger than the pores in the microfilters are retained in the retentate. The retentate is discharged from the primary filter assembly and flows to a secondary filter assembly having a plurality of microfiltration units. The permeate from the units in the primary filter assembly are combined and subjected to heat treatment.
