    摘要: A butter with caramel is suggested, which is obtainable or obtained by: (a) separating whole milk into a skimmed milk fraction and a cream fraction by means of a separation step; (b) subjecting the cream fraction such obtained to a nanofiltration (NF) step and/or a reverse osmosis (RO) step, obtaining a NF/RO retentate and a NF/RO permeate; (c) subjecting the NF/RO retentate such obtained to a heat treatment step, in the process of which the sugar contained therein is caramelised at least in part; and (d) churning the caramelised NF/RO retentate such obtained in a manner known per se.

    摘要: A process for producing lactose-free dairy products is suggested, comprising the following steps: (a) Hydrolysis of a starting milk while adding lactase; (b) Nanofiltration of the hydrolysis product for producing a first permeate P1 and a first retentate R1; (c) Reverse osmosis or nanofiltration of the first permeate P1 for producing a second permeate P2 and a second retentate R2; (d) Mixing the first retentate R1 with such an amount of the second permeate P2 and the retentate R2 that a standardized dairy product is obtained, the content of proteins and minerals of which correspond to the one of the starting milk.

    摘要: The present invention relates to a process for obtaining sterile milk, wherein the calcium ion content is reduced preferably to half of the naturally occurring amount by means, for example, of ion exchange or dialysis, and the milk is then filtered sterile, and if desired calcium ions are added again to restore the natural content.The product thus obtained has all of the biological activities as well as virtually the original composition, but it is free of bacteria, fungi and spores and will keep for a longer time.

    摘要: In order to produce a milk concentrate by membrane filtration of the milk produced at a milking plant the milk is during the milking continuously led to the concentrate space (2) of a member filter unit (1) possibly after heating to a temperature of 50.degree.-70.degree. C.
