A low labor, highly efficient process and system for manufacturing chocolate coated ice cream cookie sandwiches is achieved by incorporating conveyor means for transporting the ice cream cookie sandwich through the various stages of its manufacture along with uniquely constructed ice cream brick slicing machines and a unique chocolate coating machine. In addition, a pass-through freezer is preferably employed prior to the chocolate coating, in order to assure a high quality, tasty product. The ice cream slicing machine of the present invention employed in the process and manufacturing system of this invention is constructed for receiving a plurality of ice cream bricks and cutting each brick into a plurality of slices in an efficient, automatic, integrated operational procedure and presenting each ice cream slice to a holding zone for placement on a cookie moving along the conveyor means. In addition, the chocolate coating machine of the present invention incorporated into the process and manufacturing system of this invention incorporates a plurality of clamp means controllably driven about the coating machine and positioned for receiving the ice cream cookie sandwich and automatically submerging the sandwich in a chocolate bath and automatically releasing the chocolate-coated ice cream cookie sandwich when the chocolate coating has completely cooled and dried.

A method of and apparatus for producing frozen confections includes a mixing head which accepts one or more flows of semi-frozen or viscous confection materials and combines them into a single flow, a slicing mechanism which transversely severs the flowing confections into individual products or bodies. Next, edible particulate matter is adhered to the upper surfaces of such products by an assembly having a vibratory portion dispenser and an air jet transfer and adhering assembly which is synchronized to the motion of a product conveyor. The confectionary bodies are then advanced into a refrigerated region where they chill and solidify. Finally, the chilled confectionary bodies are subjected to a chocolate spray or bath which is allowed to congeal and the products are then ready for packaging and are moved to a packaging area.

A generally imperforate conveyor belt of articulated design carries a plurality of longitudinally spaced confection carrier assemblies. Each assembly includes an outer table having peripheral guide surfaces for receiving and supporting the sandwich. The table is connected via a rotatable shaft which extends through the belt to an inner sprocket. The sprocket engages a fixed rack as the conveyor passes through a coating station to thereby rotate the sandwich, which is in the path of sprayed chips. The chips are fed from a supply hopper onto a horizontal conveyor and hence to a chute which feeds the chips into a whirling brush which sprays the chips onto the edge of the sandwich. A sandwich squeezing device is positioned upstream of the chip spray, while an air jet disposed downstream of the spray removes unwanted chips from the top cookie surface of the sandwich. The unused chips lying on the conveyor finally drop off the conveyor end and are recycled back to the supply hopper.

The first and second conduits are adapted to dispense viscous frozen ingredients. In one embodiment, apertures in the outer second conduit are used to introduce at least a third liquid ingredient. In another embodiment, separate third conduit members are used to dispense at least a third liquid ingredient. An apparatus and method for applying enrobing material to confections, particularly applicable to frozen confections, wherein freshly produced confections emerging continuously in seriatim from a confection producing equipment are segregated into groups of a predetermined number of abutting confections arranged on the feed conveyer in a line behind a stop. A pusher bar, extending parallel to and along one side of the line of confections, pushes the line of abutting confections transversely of the feed conveyer onto a spreader conveyer formed by an arrangement of endless belts arranged side-by-side in elongated loops to slightly diverge in a fan-like arrangement. The driven belts of the spreader conveyer separate the confections to form a line of extended length and deposits the line of separated confections on an open grid conveyer that carries the line of separated confections simultaneously through a downwardly flowing sheet of enrobing material overflowing from the lip of an elevated container to coat the top and sides of the line of confections and then through the top of a pool of enrobing material overflowing from an open top container over which the grid conveyer passes to coat the bottoms of the confections.

This disclosure relates to a pickup and enrobing apparatus which will pick up stick-type novelties from a transporting conveyor which carries the novelties in a horizontal position. The apparatus includes a pickup conveyor which has a plurality of pivotally mounted clamps which grip the novelty sticks so that the novelties can be removed from the transporting conveyor. The pickup conveyor carries the novelties through an enrobing process, and the enrobed novelties are then passed through a chiller where the coating is hardened. The novelties are released from the pickup conveyor as the conveyor emerges from the chiller unit and are concurrently subjected to an airstream so that they will fall to an output conveyor with their sticks oriented in the same direction.
