摘要: The purpose of the present invention is to provide a protein, said protein having an activity of synthesizing rhamnose from glucose, and a polynucleotide encoding the same. Provided are a rhamnose synthase derived from stevia and a method for producing rhamnose from glucose using a gene. Also provided is a method for producing a steviol glycoside using the rhamnose synthase derived from stevia.

摘要: An object of the present invention is to obtain a distilled liquor which has a sufficient excellent citrus aroma but has reduced unfavorable odor generated by distillation. A distilled liquor with an excellent citrus aroma is produced by subjecting an aqueous ethanol solution having a citrus fruit immersed therein to distillation under atmospheric pressure while the ethanol concentration of a distillate falls within the range of from 50 to 80%.

High-temperature and high-pressure treatment of plant peptides in a liquid allows production of a plant extract containing a high concentration of diketopiperazines including cyclo-leucyl-leucine and cyclo-leucyl-phenylalanine. Diketopiperazines having excellent flavor derived from a plant natural product and can produce a food or drink provided with the functions of the diketopiperazines by directly mixing the diketopiperazines with the food or drink.
