A method for weighing sliced products to generate product batches of a pre-determined weight. A slicer slices products which are disposed onto a slice scale located beneath the output end of the slicer. An intermediate weight is measured at a pre-determined point in the slicing process. The intermediate weight information is used to calculate the minimum number of completion slices, based on thicknesses of the slices, needed to meet the target weight. The competed draft is transferred to a check sale where a final draft weight is measured and compared to a sum of the intermediate weight and the weight of the completion slices. Comparison of the weight is used to adjust slicing parameters for more precise targeting of the desired weight of the next draft. Completion slices may be adjusted in thickness to minimize the giveaway weight.

First line lasers project one first transverse laser line transversely to the longitudinal direction on the first surface and two first cameras arranged to capture different, overlapping first transverse image portions of the first transverse laser line. A reference laser projects a beam on the first surface that indicates a transverse reference position, and the two first cameras also capture the reference position. A control system uses the transverse reference position to combine the different first transverse image portions captured by the two first cameras to calculate a first profile of the first surface at multiple positions along a length of the first surface as the product is driven through the scanning area.

Such a blade and its associated slicing station provide great control of slices from the loaves as they proceed from the loaf to a receiving conveyor of the slicing station.

A versatile high speed slicing machine moves first and second food loaves along parallel loaf paths into a slicing station where both loaves are sliced by a cyclically driven knife blade. There are independent loaf feed drives so that slices cut from one loaf may be thicker than slices from the other. The conveyor/transfer system onto which food loaves are deposited as cut includes a receiver located below the slicing station; a lift mechanism moves the receiver down during slicing so that slices always fall about the same distance after being cut. The receiver includes a plural-belt horizontal receiver conveyor with recieving pin wheels located between the belts that periodically discharges groups of food loaf slices onto a deceleration conveyor, from which the groups are fed onto a multi-belt scale conveyor. The scale conveyor is aligned with two receiver weighing grids, each grid including plural grid elements interleaved one-for-one with the scale conveyor belts. In each machine cycle a group of food loaf slices is deposited on a grid and weighed. Two slice groups are usually weighed individually and simultaneously. The group weights control two classifier transfer conveyors.

The machine combines manual and automated mechanisms to load food loaves onto the food paths. These mechanisms share a central barrier that is used only during loading; at other times the barrier is clear of the loaf paths. The automated loaf loading mechanism has a sweep to push one or more loaves onto a support defining the loaf paths. There are two grippers, one on each loaf path; each grips the end of a loaf remote from the slicing station. For each gripper, a loaf feed drive impels the gripper (and loaf) toward the slicing station and then moves the gripper back to a home position, releasing an unsliced loaf butt on the way through a door opening in the loaf support. Each loaf feed drive includes two "short" conveyors driven at the same speed as the gripper. The loaf support is pivotally movable to a cleanup position; in its normal support position the loaf support masks the grippers, the loaf feed drive, the barrier, and the sweeps, but in cleanup position it exposes them all.

A mechanism for molding food patties from a fibrous food product (e.g. poultry breasts, fish fillets, large pieces of pork muscle, etc.) uses a conventional mold plate positioned between a fill plate and a breather plate and cyclically movable between a fill position and a discharge position; the fill plate has fill ports, one for each mold cavity in the mold plate, through which the food product is pumped under pressure, each mold cavity having a substantially larger area than its associated fill port. Each fill port has a transitional rim, past which the food flows with an appreciable change in direction, that is smoothly rounded to avoid damage to the food fibers. Each fill port also has a cutting rim, past which a part of the filled mold cavity moves on its way to a discharge position; the cutting rim shears off any food fibers along part of one face of the patty. Preferably, the breather holes in the breather plate are confined to the periphery of each mold cavity position.
