Embodiments of the device can include a needle connected to a valve which is in turn connected to a source of pressurized gas for displacing the fluid. Further embodiments of the device can comprise additional components that act to force the needle to be inserted through the cork or septum along a linear path, to aid in preventing buckling of the needle, to clamp the device to the container, to prevent expulsion of the cork or septum from the container, and to guide the needle through a specified region of the cork or septum. This device is particularly suited for the dispensing and preservation of wine.

A gas cylinder can include a cap with a flange and catch below the flange. The catch can be engaged by a cylinder support to move the cylinder into contact with a piercing element to pierce the gas outlet of the cylinder and form a seal between the cylinder and gas receiver. A pressure indicator can have a single pressure sensor to indicate a capacity of a gas cylinder to deliver pressurized gas and a pressure in a beverage container.

The container engagement surface may include a surface with a lower portion that slopes upwardly and inwardly, and an upper portion that slopes upwardly and outwardly relative to the container neck and that moves the clamp radially outwardly and away from the container neck as the clamp is moved vertically relative to the container neck. A latch may maintain a body portion of the dispensing device in an upper position, preventing needle insertion, until a container is suitably engaged with the base portion of the device, e.g., by a clamp. Sensors may detect engagement of a container with the device and/or insertion of a needle into the container.
