The present invention is directed to a novel method and device for removing oxygen from oils. The oils may be in liquid form, such as vegetables oils, etc., in solid form, such as fats, etc. or in some type of intermediate semi-solid form. By removing oxygen from various products containing oils and fats, the present invention is an effective antioxidant for food products, as well as for various industrial and commercial products, such as paints, varnishes, etc. The method comprises the steps of providing an oil containing oxygen and adding to the oil a sufficient amount of an aqueous solution containing oxygen scavenging membrane fragments and a hydrogen donor substance to reduce the oxygen present in the oil to water.

An antioxidant for fat is prepared from tocopherol, ascorbic acid and lecithin. In one embodiment, a mixture of tocopherol and a lecithin first is made at a temperature not greater than 60.degree. C. Ascorbic acid dissolved in a polar solvent is added to the mixture and the solvent is eliminated at a temperature not greater than 60.degree. C. Alternatively, a lecithin is added to a fat. Tocopherol and ascorbic acid are dissolved in a polar solvent which is then added to the lecithin-added fat.

In accordance with the present invention a process and apparatus for removing contaminates from edible cooking oil is provided. A continuous stream of cooking oil at an elevated temperature is withdrawn from a cooking bath. A continuous stream of liquid solvent for at least a portion of the contaminates is mixed with the oil. The solvent has a specific gravity different than the specific gravity of the oil. As the oil and solvent streams are mixed, at least a portion of the contaminates are transferred from the oil to the solvent. The oil and solvent mixture is then separated by specific gravity into a stream comprising cleaned oil and a stream comprising solvent and contaminates. The cleaned oil stream is then returned to the bath, preferably being heated in a heat exchanger prior to introduction in the bath.

This invention relates to an antioxidizing composition which comprises an antioxidant such as tocopherol, BHT or BHA; condensed phosphate such as pentapolyphosphate; and citric acid. The antioxidizing composition has antioxidant action superior to conventional compositions and has good compatibility with fat, oil and food containing fat or oil. The antioxidizing composition preferably comprises tocopherol, lecithin, pentapolyphosphate and citric acid.

Disclosed are free flowing, solid, antioxidant particles comprising butylated hydroxyanisole encapsulated within an edible polymeric coating. The coating is adapted to release the butylated hydroxyanisole when the particles are in contact with vegetable oil or molten fat. The process for preparing these antioxidant particles includes establishing a molten butylated hydroxyanisole as droplets in a liquid dispersion containing a dissolved film forming edible polymer. The liquid dispersion is cooled below the melting temperature of the butylated hydroxyanisole droplets thereby causing the dissolved polymer to form an encapsulated film around the solidified droplets and surface drying the solidified droplets.
