An apparatus for pulling a section of an animal carcass from the carcass wherein the carcass is held using means for holding. The apparatus includes means for anchoring to the section of the carcass, and means for forcibly separating the means for anchoring from the means for holding, preferably in a substantially vertical downwards direction, and thereby remove the section from the carcass. According to preferred embodiments, the means for anchoring may be a hook or a gripper which clamps to the section of the carcass. A system including the apparatus and a corresponding method are also provided.

A meat dressing and boning method and a system thereof can dress and bone meat and carcass in short work-hours, while avoiding bacterial contamination. The system includes a clamp mechanism for holding a meat block with bones, a hanger connected to clamp mechanism and movably suspended from a support rail, and a guide rail or rails having a tubular or rod-like configuration for supporting the meat block positioned along and below the support rail. The hanger has at least two pivots to allow the meat block held by the clamp mechanism to rotate about at least first and second axes, which are perpendicular to each other. The meat and carcass can be broken up and boned while being moved along the support rail, with the swinging directions of hanger regulated by the guide rail or rails.

The method includes cutting the animal carcass to remove the muscle portion and then forming from the removed rib eye muscle portion a generally cylindrically shaped base. Then, a first cut is made which extends into the cylindrically shaped base along a cut line extending generally from one end of the cylindrically shaped base to the other end. Next, a second cut is made which extends from the first cut and extends generally circumferentially with respect to the cylindrically shaped base from one end surface to the other along the cylindrically shaped base, wherein the second cut continues to extend to the center axis of the cylindrically shaped base along a generally helically shaped path. As the second cut is made, a generally flat meat product is continuously removed or unrolled from the cylindrically shaped base, the flat meat product being the product of the process of the present invention.

An animal processing machine including rib cutting apparatus constructed and arranged so as to optimize the rib portion cut from an animal side. The rib cutting apparatus includes a frame having a conveyor movable thereon and operable to convey an animal side to a rib cut knife. The animal side is urged against the conveyor, and the rib cut knife is mounted at an angle relative to the direction of conveyor travel, and is adapted to be tilted relative to the animal side so as to cut along a line corresponding to the brisket of the rib section. The knife is also twisted throughout its length, so as to provide an optimum amount of lean meat in the belly severed from the rib section. Additionally, the rib knife is initially oriented to sever the brisket or breast bone from the belly, so that the belly will be free from undesirable brisket bone. This twist function makes this initial orientation possible while providing a subsequent change in attitude relative to the animal side which increases the lean meat left on the portion which subsequently is converted to bacon.
