摘要： An overheated steam oven which cleans an interior of a cooking cavity of the overheated steam oven using hot water and overheated steam, and executes a cooking operation using the overheated steam. The overheated steam oven includes a cabinet to define the cooking cavity therein, an overheated steam generator to supply overheated steam into the cooking cavity, and a cleaning unit to spray water from an interior of the overheated steam generator into the cooking cavity to clean the interior of the cooking cavity. A control method of the overheated steam oven includes spraying the water into the cooking cavity by use of the cleaning unit in response to a cleaning start signal, thus cleaning the interior of the cooking cavity, and supplying the overheated steam from the overheated steam generator into the cooking cavity after the cooking cavity is cleaned, thus drying the interior of the cooking cavity.

摘要： A steam cooking system for cooking foods such as a light Chinese dish called as dim sum with steam comprises a steam generator disposed outside a guestroom of a restaurant, a cooking chamber formed adjacent to each of tables in the guestroom, and a steam line extending from the steam generator to at least one steam outlet formed in a bottom of the cooking chamber. A valve is provided in the steam line at the vicinity of the steam outlet to be switchable between an open position of supplying steam into the cooking chamber and a close position of stopping the supply of steam. A control unit controls the valve to keep the valve at the open position for a cooking time period determined according to a menu to be cooked with steam. An exhausting unit is formed at a top of the cooking chamber to exhaust used steam from the cooking chamber to the outside of the guestroom. In this system, guests can enjoy the steam cooking operation at the guest's table by themselves and tasting the steam-cooked foods at an optimum tasting temperature.

摘要： A food processing apparatus includes a cabinet defining a food processing compartment accessible through a front access opening, and has a door hinged on the cabinet for movement between open and closed positions relative to the access opening. The door includes inner and outer door panels pivotally interconnected to enable access between the panels. The inner and outer door panels have aligned windows with the windows on the inner panel being larger so as to enable light from lights mounted on the inside of the outer panel to illuminate the processing compartment without glare to the operator. Other features of the invention enable better control of zoned heating within the processing compartment when used in either convection steam or convection hot air modes of operation.

摘要： A humidity controlled holding cabinet for storing food products or other items at controlled heat and humidity levels having an environment conditioning system. The system comprises a chamber with at least one access and containing heat and humidity detection devices which signal a microprocessor when heat or humidity, or both, deviate from predetermined parameters. The microprocessor controls a heater and a humidity control device that are contained in a module located adjacent to the chamber. Air is drawn from the chamber by a forced air blower and is circulated and recirculated through the module. Depending on the input from the detection devices, the microprocessor will instruct the heater to heat the air or the humidity control device to increase the humidity of the air. The system may also exhaust air containing excess heat or humidity, or both. The system also may be equipped with means to recapture water from exhausted air carrying excess humidity.

摘要： The present invention relates to a baking oven, particularly for bread or confectionery. It consists substantially of a closed compartment within which a plurality of cooking surfaces are envisaged, fixed or mobile, heated, and between which a hot air flow may circulate. These cooking surfaces are heated by first heating means, whilst the hot air flow above the cooking surfaces is heated by second heating means, independent of the first heating means. First measuring and adjustment means are also envisaged for the temperature of the cooking surfaces, and second measuring and adjustment means for the temperature of the air flow.
