摘要： A continuous product-processing apparatus having a conveyor capable of repositioning product and cleaning itself of debris and a method for its operation. The apparatus includes a conveyor that transports products atop a conveyor belt along a carryway to a processing chamber. Upper and lower diverting rollers guide the belt along an S-shaped product-repositioning path segment of the carryway. The diverting rollers are rotated at a speed normally greater than the speed of the conveyor belt to cause the belt to slip on the roller's periphery, which effects a scraping action against the conveying side of the belt to dislodge debris from the belt and the rollers. One-way ratcheting drives or belt restricters positioned on the product-positioning path segment to limit belt excursion are used to prevent the belt from building up along the carryway and tightening in the lower return.

摘要： A protruding portion 100 having a sloped surface 100b sloped against a ceiling surface is provided on the ceiling side of a cooking chamber 20. Superheated steam from a steam temperature-raising device 50 is blown off from first ceiling steam blowoff openings 101 provided in a flat surface 100a of the protruding portion 100 toward a bottom face within the cooking chamber 20, while the superheated steam is blown off from second ceiling steam blowoff openings 102 provided in a sloped surface 100b of the protruding portion 100 toward the side face within the cooking chamber 20. The superheated steam blown off from these steam blowoff openings 101 and 102 is effectively supplied to upper-and-back surface of a heating object 90 rested in the cooking chamber 20 so as to be spaced from the bottom face of the cooking chamber 20.

The system described herein provides a baking oven of the type in question in such a way that the thermal energy is optimally used. The steam system is next to a steam heater, which is formed by at least one exhaust gas channel, which runs in a wall of the baking chamber and conducts the exhaust gas of a burner out of the oven housing.

摘要： In a ceiling part of a heating chamber, a sub-cavity is provided in which a steam-heating heater is housed. Steam generated by a steam generating device is heated by the steam-heating heater inside the sub-cavity to be brought into an overheated state, and is then jetted out through upper jet holes provided in the ceiling part of the heating chamber and through side jet holes provided in lower parts of the side walls of the heating chamber at both sides thereof. Food is supported on a rack to be in a state floating above the floor surface of the heating chamber, and, through the side jet holes, steam is jetted toward under the food.

摘要： A steaming oven having a collector plate disposed in an oven chamber. A collector plate is disposed above a boiling water reservoir in the oven chamber. The collector plate has a drain tube inserted into an overfill tube. Waste material from the steam and food droppings is conveyed from the oven chamber via the drain tube and the overfill tube. A barrier shields one or more water level probes or sensors from water turbulence, thereby providing reliable water level sensing by the water level probes or sensors.

摘要： A cooker has an external circulation path outside a heating chamber in which foods are to be placed. A blower sucks in gas inside the heating chamber, and forms, in the external circulation path, a gas flow that makes the sucked gas return to the heating chamber. Downstream of the blower, the external circulation path is provided with an exhaust port, in which a damper is provided. The damper closes the exhaust port during cooking, and opens the exhaust port when a door of the heating chamber is opened. After the damper is changed to a position of opening the exhaust port, the blower continues to operate until a predetermined condition is satisfied.

摘要： An apparatus and method of producing a food product is disclosed. The food product is placed inside of an air-tight chamber, in which the food product is to be cooked, wherein steam is generated from a source of water and is introduced into the cooking chamber. The steam heats the inside of the cooking chamber and serves as a heat transfer media to heat the food product as well as a color and flavor transfer media to color and flavor the food product. That is, a flavoring and coloring additive, such as liquid smoke, may be added to the water utilized in generating the steam in order to flavor the food product being cooked. The steam then transfers the flavoring and coloring additive to the food product which condenses on the food product adding flavor and color to the food product.

摘要： An oven for baking food products includes a spiral conveyor having a wire mesh conveyor belt for transporting food products from a loading bin to a storage bin. The spiral conveyor is surrounded by a threaded cylindrical housing having apertures which communicate with the loading bin, heat source, plenum, and recirculation fan. Heated air is blown into the threaded housing such that a downward spiral or vortex of air is created which envelops the food products upon the spiral conveyor belt for efficient baking. The housing is partially removable for cleaning or maintenance of the conveyor. Heated air within the housing is drawn about the food products as it is suctioned into a recirculation tube for distribution to the storage bin and to the plenum for recirculation through the housing. In addition, the loading bin is mounted upon a vibration device such that food products are evenly distributed upon entry to the spiral conveyor.
