The present invention presents a kneading mechanism for a food preparation appliance. The kneading mechanism has a kneading container, a blade assembly and a kneading base. The kneading container has an open bottom face and the kneading base has a textured surface. An adaptive kneading technology which resides in a processor is used to form an optimal viscoelastic dough ball. Since there is variation in the gluten content and the amount of water used makes the dough ball have a viscoelastic nature this technology due to its self-learning mechanism optimizes the kneading of single dough balls using adaptive kneading technology.

The invention relates to a method and device for continuous production of articles including at least two different types from a pasty mass. The mass is introduced into a processor unit by a supply unit, processed in the processor unit and transported further thereby, whereupon an adjunct is added by a metering unit to the mass transported through the processor unit. The mixing of the adjunct introduced to the mass is carried out by a mixing unit with mixing elements located downstream of the processor unit. The mass with provided adjunct is formed by a forming unit into individual articles downstream of the mixing unit. According to the invention, the metering of the adjunct is carried out in a sequence of metering conditions with at least two different metering conditions, wherein the metering unit, for a given metering condition, introduces the adjunct to the mass at a given metering rate.

The invention relates to a mixing kneader for kneading and providing thermal regulation of pasty products. The kneader includes a vessel, temperature regulators for selectively cooling and heating the vessel, a rotating tool for agitating products in the vessel and for exchanging heat with the products, a non-rotating tool for diffusing gas to the products and a controller with display. The invention enables precise regulation of temperature of the products in a scalable production process. In one instance, the invention may be extended to function as a sourdough fermenter for the production and preservation of sourdough.

A system for the continuous production and dispensing of a baking mass for the production of baked products such as, in particular, flat wafers, hollow wafers, wafer rolls, waffles or cakes includes a pre-mixing device for the mixing and/or storage of a first baking mass component and one or more pumps for the continuous conveyance of the first baking mass component from the pre-mixing device to a baking mass dispensing device. An after-mixing device is provided between the pre-mixing device and the baking mass dispensing device for the subsequent continuous addition of a powder such as, in particular, powder which tends to clump such as in particular flour, wheat flour, cereal flour, legume flour, powder having high water absorption, pre-gelatinized flour, pre-gelatinized starch and/or thickening agent. A method for the continuous production and dispensing of the baking mass is also provided.
