An apparatus for freezing confection material includes a plurality of separate mold strips which are indexed in a closely spaced single file over several longitudinally spaced, transversely extending rows of nozzles. Coolant is forced upwardly from the nozzles in single vertical jets which impinge perpendicularly against the mold strips midway between adjacent mold cups. The mold cups are arranged with their wide side faces extending in their direction of travel, and the single jets of coolant impinge upon wall portions of the mold strips which extend transversely between such opposing wide side faces. The heat exchanger for refrigerating the coolant includes a vertically super-imposed array of heat exchanger tubes that is located directly under the mold cups so that the coolant will drip from the mold cups onto the heat exchanger tubes. The coolant then cascades from upper to lower heat exchanger tubes and is refrigerated by the time it trickles into a collection housing situated below the heat exchanger. Mechanical seals are formed between the adjacent mold strips by intermeshing end walls of the mold strips; the seals enable the coolant to be continuously sprayed without concern that the coolant may be injected upwardly between the strips to contaminate the confection material.

An apparatus and system are described for inserting sticks into liquid confection material contained in a mold being carried along, preferably through a bath of refrigerant. A transfer spider assembly having a number of laterally-extending arms is mounted beside the refrigerant bath. At least one stick-gripping mechanism is supported by each of the arms of the spider assembly. Preferably, these mechanisms are grouped in clusters which enable the same to receive and grip sticks being provided in a selected configuration from a supply hopper. Each stickgripping mechanism includes elements biased into contact with one another for releasably gripping a stick therebetween. A stick transfer conveyor is supported in operative relationship to the bath of refrigerant and the molds therein. This conveyor has a plurality of stick-supporting flights for accepting sticks from the transfer spider assembly and supporting them. The transfer conveyor is adapted to be driven in synchronism with the movement of said molds and is positioned to enable said stick-supporting flights to insert sticks into the liquid confection material in the molds, support the sticks therein and to automatically enable release of the same after a predetermined amount of travel and solidification of the confection material. Preferably, sticks are supplied by a vacuum-operated supply means having a pair of vacuum pick-up heads supported at approximately 90* to one another by a pivotally movable yoke assembly. Each vacuum pick-up head is adapted to be connected to a vacuum source, is provided with a series of passageways, and slideably supports a perforated plate. This plate is perforated and shaped so as to enable picking up sticks in the desired configuration, one stick for each mold containing ice cream and two sticks for each mold containing a popsicle confection.

Apparatus is described for inserting sticks into liquid confection material. That material is contained in a mold which is being moved along through a bath of refrigerant. At least one and preferably many stick-gripping mechanisms that include a fixed element and a clamping element biased to releasably retain a stick therebetween are mounted on each arm of a supporting spider assembly. That spider assembly includes a plurality of arms that are disposed generally in a common plane, and is provided with means for reciprocally moving the spider arms and gripping mechanisms transversely of that plane to effect both picking up and releasing of the sticks. In addition, the supporting spider assembly is indexable to pick-up sticks from a supply source at a pick-up station and transfer the sticks to a stick-release station. The supply of sticks comprises a strip of perforated paper or like material, with the sticks being supported in perforations in said strip. A stick-transferring conveyor is normally disposed over the moving molds at the stickrelease station. This conveyor includes a plurality of sticksupporting flights which are driven in synchronism with the moving molds. In that way the sticks can be inserted into the liquid confection material and supported therein until the material has itself hardened sufficient to support the sticks. Each stick-supporting flight includes a preformed backing element and a biasing member co-operating therewith to frictionally and releasably retain each stick therebetween.
