Abstract:
It is intended to provide food additive compositions in the form of slurry which are highly excellent in re-dispersibility in a liquid and dispersion stability over a long time, and powdery compositions thereof. Namely, a process for producing a food additive composition in the form of slurry which contains a polyvalent metal, phosphate ion, an organic acid having carboxyl and an alkali metal, characterized by comprising preparing a precursor by mixing water, a polyvalent metal compound and the organic acid having carboxyl and then adding a phosphate source and the alkali metal thereto.

An inorganic−particle−containing additive slurry composition which contains a polyvalent metal, phosphate ions, carboxylated organic acid, and alkali metal and satisfies the following requirements (a) and (b). 70≤X≤90,000 X: Amount of the alkali metal contained in the inorganic−particle−containing additive slurry composition on solid basis (mg/kg) 0.1≤Y≤15 Y: Electric conductivity of the inorganic−particle−containing additive slurry composition regulated so as to have a solid concentration of 10 wt.% (mS/cm) When added to a food, the inorganic−particle−containing additive slurry composition or an inorganic−particle−containing additive powder composition is excellent not only in dispersibility in the liquid and storage stability but in flavor.
