Abstract:
Process for the preparation of a fibrous product comprising protein and having a moisture content of at least 65% by weight based on total weight of fibrous product by first preparing a homogenous mixture of protein material comprising cheese, a moisture binder material, a calcium-complex forming agent, a hydrocolloid which precipitates with metal cations and water at a temperature in the range of 70 to 90 °C under high shear with the pH of the homogenous mixture being in the range of 6.4 to 7.5. The homogenous mixture has a water content of at least 75% by weight based on total weight of the homogenous mixture, whilst total protein content is in the range of 5 to 20% by weight based on total weight of the homogenous mixture. A solution of a metal cation with a valency of at least 2 is subsequently added in order to form the fibrous product. This fibrous product is then isolated and cooled. The fibrous product thus obtained is particularly suitable for use in preparing meat substitute products.

A presente invenção é referente a um processo de destoxificação da farinha de trigo ( Triticum spp.) e glúten através da formação de estruturas supramoleculares com a quitosana. A invenção refere-se também à respetiva farinha e glúten destoxificados em que são obtidos valores de redução de epitopos tóxicos para os doentes celíacos de 65 e 88% quando comparados com a farinha e glúten não modificados ou originais, respetivamente. Adicionalmente diz ainda respeito à utilização do processo de destoxificação noutros cereais e respetivos produtos, nomeadamente em outras gramíneas (Poaceae), subfamília Pooideae, principalmente das espécies da tribo Triticeae como a cevada ( Hordeum spp.), o centeio ( Secale spp.), o triticale (x Triticosecale ) e da tribo Aveneae como a aveia ( Avena spp.), bem como os seus produtos germinados.

Disclosed is an edible, discontinuous gummy delivery system comprising peptide particles with an average particle size from 5 to 500 µm and an average molecular weight from 1,000 to 10,000 Da dispersed in an elastic matrix, wherein the peptide particles are undissolved or no more than partially dissolved in the elastic matrix, and wherein the peptide particles are present in an amount from 8 to 45% of a total mass of the delivery system. Methods of preparing the gummy delivery systems are also disclosed.

The present invention is directed to beadlets with a self-heating temperature ≥ 120°C comprising gelatin, lignosulfonate, a low amount of antioxidant, and Vitamin A or a derivative thereof and optionally Vitamin D or a derivative thereof, as well as to a container with a volume ranging from 450 l to 3000 l comprising such beadlets. Die vorliegende Erfindung betrifft ein Milchersatzprodukt, umfassend 1 bis 4 Gew.% pflanzliches Fett; 2 bis 5 Gew.% Kollagenhydrolysat; 3 bis 6 Gew.% Kohlenhydrat; und 80 bis 94 Gew.% Wasser, wobei das pflanzliche Fett als Öl-in-Wasser-Emulsion vorliegt, und wobei die Menge an Kollagenhydrolysat zwischen 70 und 75 Gew.% der Menge an Kohlenhydrat beträgt. Die Erfindung betrifft ferner ein Verfahren zur Herstellung dieses Milchersatz- produktes, umfassend die Schritte: - Mischen von pflanzlichem Fett, Kollagenhydrolysat, Kohlenhydrat, Wasser und optional weiteren Komponenten; - Erhitzen der Mischung auf eine Temperatur von 60 bis 90 °C, bevorzugt von 75 bis 85 °C; und - Homogenisieren der Mischung, bevorzugt mittels Hochdruckhomogeni- sation bei einem Druck von 150 bis 350 bar.
