Ein Verfahren und eine Vorrichtung zur Herstellung eines Frischkäsekonzentrates mit hohem Trockenmassegehalt, bei dem mittels einer Trenneinrichtung dickgelegte Milch in eine wässrige Phase und ein Feststoffkonzentrat, den Käsebruch, getrennt wird, zeichnen sich dadurch aus, dass der aus der Trenneinrichtung (1), abgeleitete Käsebruch direkt oder nach Durchlaufen wenigstens einer oder mehrer weiterer Verfahrensschritte in eine dem Düsenseparator (1) nachgeschaltete Vollmantel-Schneckenzentrifuge (14) geleitet wird, wo weitere Molke vom Käsebruch getrennt wird.

An elongated vat (10) has an inlet (16) for curds and whey, a normally closed whey sink (18) and an aperture (32) for the delivery of drained curds that is normally closed by a sealing cover (34). A horizontal trough (20) with perforated walls (22) is suspended in the vat at a position beneath the inlet for curds and whey and abutting against the end walls of the vat, and encompassing said delivery aperture. An auger (38) is rotatably supported in the trough and is driven by motor means (44) adapted to perform alternative rotations. Several cycles of alternative rotations subject the curds in the trough to weak squeezing, thereby drying the curds. Curds are eventually expelled by the auger after opening the sealing cover.

The curd ripening apparatus comprises a perforated cylindrical drum, rotatably supported within a trough-shaped casing (10) and having open ends abutting against opposite walls of the casing, one of which has an outlet aperture (52) partly coinciding with the open end of the drum (42), while a supply pipe of curds and whey goes through the other wall, within the drum (42). The outlet aperture is closable by a crescent-shaped shutter (54) having a sharp edge to slice the curds being delivered. The casing can be inclined towards said outlet aperture.

The invention relates to backplate assembly (6) suited for use in a cheese pressing vat, in which pressing vat the curd together with the whey, or alternatively, without the whey, is pressed into an essentially solid cheese mat, said pressing vat comprising a bottom, side plates, a discharge-end backing plate and a backplate (6), said backplate being located at the infeed end of the curd (and the whey) and said bottom being covered with a web such as a polymer fabric adapted longitudinally movable on the bottom of said pressing vat, and in which pressing vat system above the pressing vat is adapted a pressing means with a pressing area essentially equal to the bottom area of the pressing vat, the pressing surface of said pressing means being at least essentially planar. The invention is implemented by adapting said backplate assembly (6) into the pressing vat so as to be movable in the longitudinal direction of the pressing vat and by providing said backplate assembly with an actuator (8, 9) serving to adjust the backplate assembly (6) to a suitable height between its maximum and minimum positions.
