Mounted in the housing (2) of the valve (1) in the milking device described is an air channel (5) and a bypass channel (6) in which a shut-off element (7) is fitted. The connection tube (3) on one side of the valve (1) is connected to a pulsator and the connection tube (4) on the other side of the valve (1) is connected to the pulse chamber of a teat cup by means of a line (8) which is divided in the vicinity of the valve (1). The shut-off element (7) has an obturator (9) which is biased by a compression spring (10) in the valve-opening direction. During the pulse-chamber evacuation phase, the air channel (5) and the bypass channel (6) are available for the air flow. During the air-entry phase, the bypass channel (6) is closed off by the shut-off element (7) so that only the air channel (5) is available for the air flow. During the evacuation phase, a significantly greater cross-sectional area is thus available for the air flow than during the air-entry phase. This ensures a rapid reduction in pressure during the evacuation phase and a slower increase in pressure during the air-entry phase in the pulse chamber of the teat cup, thus ensuring that the teats are massaged more delicately.

In the process a mash obtained from crushed fruit is separated into pulp particles and juice in a fully enclosed worm centrifuge. The separation of insoluble fruit pulp particles by the fully enclosed worm centrifuge takes place immediately after the crushing of the fruit, which in turn is immediately followed by the inactivation of the fruit's own pectolytic enzymes and polyphenol oxidases by heating the juice discharged from the fully enclosed worm centrifuge. This makes possible the production of naturally cloudy juices without the enzymatic alteration of fruit components because the pressing process takes only a few seconds so that virtually no enzymatic decomposition and conversion reactions take place.

Before partial emptying of the centrifuge is initiated, the valve (9) is first opened and pressure is applied to the elastic line part (6) from outside. The pressure drop in the outlet line (3) due to the partial emptying which follows is compensated by the compression of the elastic line part (6).

Zur Regulierung des Fettgehaltes einer in Rahm und Magermilch separierten Vollmilch wird die Dichte der Magermilch in Meßintervallen ermittelt, der gemessene Wert gespeichert, anschließend die Dichte der standardisierten Milch gemessen und die Zufuhrmenge des Rahmes so gesteuert, daß sich zwischen der Magermilch und der standardisierten Milch eine vorbestimmte Dichtedifferenz einstellt, die dem gewünschten Fettgehalt in der standardisierten Milch entspricht. Der bei jedem Meßintervall gemessene Wert der Magermilch wird mit dem gespeicherten Wert verglichen, und erst bei einer Abweichung der Werte voneinander wird der zuletzt gemessene Wert anstelle des bisher gespeicherten Wertes gespeichert und die Zufuhrmenge des Rahmes so gesteuert, daß sich eine der Abweichung entsprechende veränderte Dichtedifferenz einstellt.

Die sich im Feststoffraum 4 der Schleudertrommel 1 ansammelnden Feststoffe werden periodisch über Kanäle 5, ein erstes Schälorgan 7 und eine Konzentratleitung 8 aus der Schleudertrommel abgeleitet. Um während des unterbrochenen Feststoffabzuges eine Aufheizung des ersten Schälorgans 7 durch Flüssigkeitsreibung zu verhindern, wird zumindest ein Teil der Klarphase über die Rezirkulationsleitung 17 in die erste Schälkammer 6 geleitet und von dem ersten Schälorgan über die Verbindungsleitung 15 wieder in die Klarphasenleitung 13 zurückgeführt. Das Schälorgan wird dadurch zwischen den Feststoffabzugsphasen gekühlt. Auf diese Weise wird eine nachteilige Temperaturbeeinflussung empfindlicher Feststoffe vermieden.
