A food product slicing apparatus includes a tray configured to support food product blocks. A cavity is provided for receiving unsliced ends of food product blocks, and a removal member is used to eject the ends from the cavity. Upper and lower drive assemblies are provided for moving the blocks to a slicing station. The height of the upper drive assembly is adjustable relative to the lower drive assembly. A plurality of output conveyors receive stacks of sliced food product from the slicing station. The output conveyors are parallel and convey the stacks of sliced food product along linear and parallel paths.

Systems, apparatuses, and methods for forming and texturing a comestible product are provided. In one aspect a machine includes a product hopper adapted to receive comestible product, and a product forming and texturing assembly. The assembly includes a plate defining a product opening therein, and a texturing unit coupled to the plate and including a plurality of projections extending therefrom into the product opening to form indentations in comestible product positioned in the product opening. The machine also includes a knock-out mechanism adapted to engage comestible product positioned in the product opening in order to dislodge the comestible product from the product opening. The assembly is moveable between a first position, in which comestible product is adapted to be introduced into the product opening from the product hopper, and a second position, in which the knock-out mechanism is adapted to engage the comestible product positioned in the product opening.

Reference markers are arranged on a fixed plane, with respect to the opposing sides of a food product (45) which is illuminated by lasers (75,85). Cameras (80,90) are arranged relative to the product, for detecting the product's surface profile. A controller co-ordinates the actuation of the laser and cameras, while the food product is conveyed through the fixed plane. Independent claims are also included for the following: (a) food product slicing system; (b) surface profile determining method for food products.

A food handling system having a food product positioning system, vacancy reduction system, and a fill and packaging system. The positioning system has a controller for receiving data captured by a sensor and for instructing an alignment robot to move a food product to a destination position. The controller is capable of signaling the robot of the vacancy reduction system to move the food product from the food product parking station to fill a vacant food product position on the main conveyor. The shuttle packaging system includes the main conveyor for transporting food products in a longitudinal direction, a supply of open top containers displaced along a longitudinal direction and movable in the longitudinal direction into a filling station. The shuttle system includes a shuttle robot for moving food products from the main conveyor to an open top container in the filling station.
