The present invention discloses a method for extracting an amino acid ester, which method comprises adding a water-insoluble organic solvent to a hydrous solution containing a mineral acid salt of an amino acid ester, then adding a base thereto to liberate the amino acid ester, and transferring the amino acid ester into the organic layer, which method is characterized in that the extraction is carried out by keeping the pH of the aqueous layer at 7-8.
