It is intended to provide modified acacia having an increased total dietary fiber content and use thereof. This modified acacia, which is obtained by heating acacia, has a total dietary fiber content (determined by the AOAC method) of 90% or higher and preferably has a weight-average molecular weight of 1,000,000 or more. This modified acacia is usable as a dietary fiber material or an additive for enriching dietary fiber to be used in foods, drinks and drugs. Namely, it is also intended to provide foods, drinks or drugs containing the above-described modified acacia as a dietary fiber material or an additive for enriching dietary fiber.

A method of heightening the emulsifying power of gum arabic without causing coloration or offensive-odor emission. The method comprises: a step in which an aqueous solution of gum arabic which has undergone no heat treatment is prepared in a concentration of 50 mass% or lower; and a treatment in which the aqueous solution is held under the conditions of a temperature lower than 60°C for at least 6 hours. Thus, a modified gum arabic can be obtained which is colorless, emits no offensive odor, and has excellent emulsifying power. The modified gum arabic is suitable for use as an emulsifying agent for beverages, snacks, chewing gums, oily perfumes, oily dyes, oil-soluble vitamins, etc.

A method of efficiently heightening the emulsifying power of gum arabic, i.e., a process for producing gum arabic with excellent emulsifying power. Also provided is a method by which gum arabic modified so as to have higher emulsifying power is obtained without causing a problem that it becomes a candy-like mass or adheres to the container and without arousing a trouble that it dries excessively or scorches. The method can be practiced by heating gum arabic (raw material) under dry conditions, preferably under the conditions of a drying loss of 3% or less.

The present invention also provides a manufacturing method of a microcapsule and an oral composition containing the microcapsule.
