Abstract: The invention relates to an equipment for humidifying flour-type powder products. The device according to the invention consists of a base plate (16) on which two columns (1) are placed. In the upper part of the columns, there is a feed magazine from which the flour is taken and dosed through the rotary selector (2) located in the casing (5) on the upper plate (4). The flour will fall freely on the cone (26) mounted with the arms (9) in the casing (6) and will reach the vanes (22) mounted on the pallet disk (27) which can be rotated and allow the flour to pass through the sieve (18) and then to the humidification chamber formed by the lower part of the casing (6) and the casing (17). The casing (6) provides a vibrating motion through the outer flange (7) which rests on electromagnetic cells (8) mounted circularly on the movable intermediate plate (23). To open the slots between the blades (22), the handwheel (10) is driven, which will transmit the rotational movement to the bevel gears (21) which engage with the toothed crown (20). The rotary brushes (19) receive the rotational movement through the gearing formed by the bevel gears (11) and (24) located under the sieve (18) to ensure a better dispersion of the flour. After passing the flour through the sieve (18) it reaches the humidification chamber where there is a circular pipe (12) with nozzles for spraying water and two mixing arms (14) assembled at the bottom. Wet flour is drained through the gutters (13). The casing (17) is attached to the base plate (16) by the bracket (15).

The dry ingredients priming unit can include a vertically-oriented hopper and a screw positioned within an interior region of the hopper, wherein the first screw extends along the central longitudinal axis of the hopper and is configured to rotate about its own central longitudinal axis. The system can also include a mixing assembly, a forming assembly, an oven, and a controller. The controller can be coupled to the priming assembly and configured to adjust the amount of dry ingredients delivered from the hopper to the mixing chamber by controlling rotation of the screw.

A dough making apparatus (10) is disclosed that is configured to produce dough having a reduced starch content without compromising the desired moisture content of the dough. The dough making apparatus (10) comprises a kneading chamber (20) including a controllable water outlet (62) and a kneading arm (22) driven by a motor (30);a controller (40) arranged to control said motor and water outlet; a weight sensor (18) coupled to the controller for determining the weight of the contents of the kneading chamber; and a user interface (14) communicatively coupled to the controller, wherein the controller is adapted to receive (103) a user input with the user interface indicative of a desired moisture content of a dough to be made; detect (105) the weight of an amount of flour added to the kneading chamber with said weight sensor; and calculate (107) a target weight of said dough based on its desired moisture content from the detected actual weight of said flour and an estimated reduction in the starch content of said flour caused by washing said dough with an additional amount of water. In this manner, the controller can accurately control the moisture content of the washed dough by weighing it with the weight sensor and taking additional measures if necessary when the weight of the washed dough is higher than its target weight. Also disclosed is a method of preparing dough having a reduced starch content with such a kitchen appliance.
