Described herein is a filled biscuit characterized in that it comprises: - a biscuit body (2) shaped like a container, defining a cavity (2A) contained in which is a filling material (4) ; - a cover (6) made of biscuit designed to close said cavity (2A) from outside, either partially or completely; and - a second filling material (8) that is set in contact simultaneously with said cover (6), said container body (2), and said filling material (4), so as to seal said cover to said container body and withhold said first filling material within said cavity.
Abstract:
Process for the production of a soft pastry bakery product in the form of an oblong bread roll, filled with a chocolate layer in the form of slab is disclosed. The steps include providing a semifinished product in the form of an oblong bread roll, obtained from a flour-based dough, leavened with natural yeast, followed by a baking step and then by a step of injecting a hydro-alcoholic solution so as to obtain a bakery product with a controlled moisture content. Thereafter a longitudinal cut on the bakery product is made so as to obtain a lower portion and an upper portion. A layer of melted chocolate is deposited on the upper surface of the lower portion. Also described is a snack obtained by means of the process.

A snack product comprises a bread dough body (10) with a pasty filling (20). The dough body comprises a pre-baked bread dough body with a weight of less than about 20 grams. The bread dough body can be baked off together with the filling in an oven and is particularly baguette-shaped or pistolet-shaped with a length of between 7 and 8 centimetres and a cross-section of around 3 centimetres. Applied as filling is for instance a neutral butter or cream cheese or a tapenade on the basis of olives, tomatoes, vegetables and/or herbs and spices.
