摘要:
Refined fermented beverage, a neutralization system, an in-line caustic dosing system, a method for neutralizing, and corresponding uses, with the refined fermented beverage having the following properties: (i) a titratable acidity, relative to acetic acid, of less than about 0.5 grams per liter of the refined fermented beverage, preferably less than about 0.25 grams per liter; (ii) a protonated acetic acid concentration of less than about 100 parts per million, preferably less than about 50 parts per million, and more preferably less than 25 parts per million; and (iii) a combined concentration of acetic acid and acetate less than 1000 ppm.
摘要:
Refined fermented beverage and method for producing the same, including neutral malt beverages, having reduced or negligible levels of organic acids, particularly acetic acid, relative to bright beer and other untreated fermented beverages. The refined fermented beverage is produced using a caustic dosing system to neutralize naturally-present organic acids typically present in untreated fermented beverages and convert them into their respective conjugate bases as salts. The salts of the neutralized organic acids are then removed or separated from the treated fermented beverage to form the refined fermented beverage.

A process is disclosed for reducing the alcohol content and/or the sugar content of a beverage. The process comprises wetting a predetermined amount of a particulate solid material with a predetermined amount of water, and contacting the beverage with the pre-wetted solid adsorbent material. The material selectively adsorbs alcohol, sugar, or alcohol and sugar from the beverage. The process can be carried out at a small scale and does not require any sophisticated equipment.

A method is disclosed of preparing a colorless, clear beer by a method including ultrafiltration and the addition of dextrins, bittering agents and a foam enhancer. Methods of preparing improved nonalcoholic malt beverages and making natural beer foaming components also are disclosed.
摘要:
A method of treating beverage which comprises contacting the beverage with polyvinyl polypyrrolidone and subsequently centrifuging the beverage to remove the polyvinyl polypyrrolidone.
