It is intended to provide a degradation inhibitor which is excellent in the performance of inhibiting degradation of foods, cosmetics, etc., can be used only in a small amount, and is highly tolerant to heating and the effects of light. Namely, (1) a degradation inhibitor which contains a water-insoluble antioxidant, a water-soluble antioxidant and an emulsifying agent; and (2) a degradation inhibitor which contains a water-soluble antioxidant and carnosol and/or carnosic acid, wherein the total amount of carnosol and carnosic acid is 4% by weight or more.

Abstract:
An antioxidant material comprising a flavonoid aglycone and vitamin C. The flavonoid aglycone refers to eriodictyol and/or diosmetin obtained by treating a raw material containing flavonoid glycosides derived from lemon, lime or sudachi (Citrus sudachi Hort) into aglycone. This antioxidant material is preferably produced through the step of mixing the flavonoid aglycone after the treatment into aglycone with vitamin C. The treatment into aglycone refers to a glucosidase treatment using β-glucosidase derived from Penicillium multicolor or a microbe of the genus Aspergillus, or refers to a microbial fermentation treatment using a microbe of the genus Aspergillus. Further, there are provided an anti-deterioration agent and food or beverage comprising the above antioxidant material.
