The invention provides a beverage composition comprising hydrolyzed collagen and vitamin C, or a derivative thereof, which is particularly suitable for improving skin hydration and skin condition. Additional active ingredients may include methyl sulphonyl methane, a vitamin selected from the vitamin B complex, L-lysine, omega-3 and omega-6 fatty acids. The beverage composition is such that it promotes higher absorption and bioavailability of skin-nourishing ingredients. The beverage composition can improve the moisture content of the skin and can prevent fine lines and wrinkles.

The invention is about a method of increasing the solubility of fat-soluble nutrient in water. The method comprises a step (1 1) of increasing the pH of water to generate alkaline water with a pH of at least about 8.0; a step (12) of mixing the water with an edible oil to generate surfactant-containing water; a step (13) of adjusting the pH of the surfactant-containing water to a predetermined range; and a step (14) of combining the surfactant-containing water and substance containing the fat-soluble nutrient to produce food or drink. An apparatus for conducting the method is also provided.

A nutritional composition is described for prevention or treatment of an immune condition. The composition includes at least vitamin E, vitamin C, vitamin B6, folic acid, vitamin B12, copper, zinc, selenium, fructo-oligosaccharides and/or gum acacia, a probiotic lactic acid bacterium. For example, in an embodiment it comprises per 300 g: 150 IU Vitamin E, 120 mg Vitamin C, 2 mg Vitamin B6, 400 ug Folic acid, 3.8 ug Vitamin B12, 1.5 mg Copper, 15 mg Zinc, 100 ug Selenium, 3 g Fructo-oligosaccharides and/or gum acacia, 10E10 cfu ST11 lactobacillus. The present invention provides an emulsion composition that ensures excellent emulsion stability and excellent solubility in water, as well as excellent transparency and storage stability of a solution prepared by adding the emulsion composition to water. The present invention also provides an aqueous composition, in particular, a solution aqueous composition (aqueous liquid composition), preferably food or a beverage, containing the emulsion composition. The emulsion composition is an emulsion composition prepared by emulsifying an oil phase component and an aqueous phase component using gum ghatti, wherein the emulsion composition comprises gum ghatti in a proportion of more than 25 parts by weight based on 100 parts by weight, i.e., the total amount, of the oil phase component; and the gum ghatti has a viscosity of 50 to 3000 mPa•s, which is measured by preparing a 15 wt% aqueous solution of the gum ghatti and measuring its viscosity for 1 minute at 20°C and 30 rpm using a Brookfield viscometer.
