    摘要: PURPOSE: To prepare good bread from a bread ingredient stored in a frozen state, by using a novel Saccharomyces species FD 612 as a baker's yeast.
    CONSTITUTION: A baker's yeast on the market, Saccharomyces uvarum IFO 0220 and Saccharomyces species IFO 1426 as parent strians are subjected to many preferential mating repeatedly, to give Saccharomyces species FD 612 (FERM-P 6527). A baker's yeast is obtained from this mold by a conventional procedure. The baker's yeast obtained from the Saccharomyces species FD 612 has starch assimilating properties, and improved freezing resistance. Consequently, even if a bread ingredient is prepared by the use of this baker's yeast and stored in a frozen state, good bread is obtained after thawing.
