Abstract: A seasoning composition having enhanced salt intensity includes a salt component and a sodium-free saltiness-perception enhancing compound. The saltiness-perception enhancing compound includes at least one of gentisic acid 5-O-β-D xylopyranoside or kukoamine A. The seasoning composition exhibits a mean saltiness intensity that is about the same as a second seasoning compound that has an amount of the salt component that is greater than the salt component in the seasoning composition and that does not contain the saltiness-perception enhancing compound. A seasoned food product may include a food product and the sodium-free saltiness-perception enhancing compound. The sodium-free saltiness-perception enhancing compound may be used in a method of reducing sodium intake and a method of enhancing the salt taste of a food product. The sodium-free saltiness-perception enhancing compound may be derived from Solanum tuberosum.

Abstract: An expression vector that includes a polynucleotide having a heterologous regulatory element operably linked to a polynucleotide sequence derived from Solanum tuberosum and encoding a xylosyltransferase capable of glycosylating gentisic acid to produce gentisic acid 5-O-β-D xylopyranoside, a transcription template having such a polynucleotide and adapted for in vitro transcription in a cell-free system, a method for producing gentisic acid 5-O-β-D xylopyranoside by culturing a recombinant host cell containing such an expression vector under conditions in which the cell expresses the xylosyltransferase from the polynucleotide, and a method for producing gentisic acid 5-O-β-D xylopyranoside by contacting a composition including gentisic acid and UDP-xylose with a recombinant xylosyltransferase. The recombinant host cell containing such an expression vector can be a bacterial cell, a plant cell, or a fungal cell, an animal cell, or a multicellular organism such as a plant.

Abstract: An aerated food product includes a base ingredient, a protein and a liquid and, in some instances, a carbohydrate source. The base ingredient may include a whole grain source, a fiber source, a fruit source, a vegetable source, or a combination thereof. In some aspects, the product has a moisture content in the range of about 1% to about 5%. In one embodiment, the product has a density in the range of about 0.02 g/cc to about 0.50 g/cc. Abstract: An apparatus for separating a ribbon of uncooked embossed dough into separated pieces patterned/shaped like the embossed pattern. The apparatus includes a pair of spaced apart rollers for receiving a ribbon of dough there between. One of rollers has a pattern embossed on its surface to emboss the ribbon of dough with the pattern. The surface embossing and the spacing between the rollers maintains the structural integrity of the embossed ribbon of dough. The apparatus has a two spaced apart rotating arms to receive the embossed dough ribbon there between. A plurality of spaced apart fingers extend outward along the length of each of the arms and are configured to tear the dough, without sticking, into dough pieces reflecting shapes embossed in the dough ribbon. The dough pieces can be dried, and patterned shaped pieces are separated out for expansion to three dimensions by cooking.

Abstract: Disclosed are unique resealable packages for snacks. Some embodiments comprise rigid sidewalls configured to structurally support a flexible bag to maintain the thickness of the bag as it is laid on its back and opened for product consumption. In addition, disclosed packages include a resealable flexible flap having a raised pull tab for use by a consumer to peel open the bag by separating this flap from the front of the bag, and then resealing the bag by laying the flap back over the opening. The rigid sidewalls allow the integrity of the product to be maintained after the bag is resealed so that the product is not crushed if the bag is stored for later use. Edges of the peelable flap are coated with a resealable adhesive, while one side or end of the flap is connected to a portion of the bag's front surface.

Abstract: A novel separation screen, a separation apparatus utilizing the separation screen, and a method for product separation are disclosed herein. A separation screen, which is located within the separation chamber, has a plurality of openings having fixed, non-uniform sizes. The separation apparatus also includes an adjustable feed placement device located upstream from the separation screen to direct a feed stream to a selected region of the separation screen to achieve a desired size distribution in each of the product streams.
