The apparatus comprises a horizontal, extensible shovel which is driven step by step through a predetermined path by motorized means; a distributor of dough loaves arranged for dropping loaves at a first stop in the shovel path; a pizza moulder arranged at a second stop in the shovel path, for pressing and spreading the loaf; several distributors of a dressing, placed at at least a third stop in the shovel path, for dropping metered portions of dressing on the pizza carried by the shovel; and an oven placed at a fourth stop in the shovel path, for receiving the pizza from the shovel.

The machine continuously produces pasta filata cheese by stretching curds while adding hot water then moulding the pasta filata obtained into cheese such as mozzarella, provolone, etc.The curds are sprayed with hot water by nozzles (52, 55) and are pushed by twin augers (53) along a channel (54) into a vertical, substantially cylindrical stretching chamber (68) where a rotating stretching swift (74, 79) having radially projecting, arched paddles (79) stretches the curds into pasta filata against the reaction of a stationary, wall-mounted paddle (78). This spills over a partition (72) onto other augers (57) that feed the pasta filata to moulding means.The moulding means preferably comprise a rotating moulding drum (90) having surface cavities (99), against which pasta filata is pushed through apertures (94) in a distributor block (92). A piston mould (100) mounted on a slide (98) for reciprocating motion between a filling position and a delivery position is also preferably provided as an alternative.

A machine for producing curds from milk and separating the curd from the whey, comprising a hollow vat pivotally mounted on a pair of parallel spaced members for rotation about a horizontal axis extending parallel and proximate to one side of a rectangular upper opening in the tank, by means of a pair of hollow stub shafts serving as outlet ports, and actuating means for keeping the vat normally in a horizontal position and rotating it into a position in which the upper opening thereof is in a vertical plane.
Abstract:
In order to avoid using anti-stick paints, based on polytetrafluoroethylene or the like, on parts of cheesemaking machines which are to be in contact with hot curds (pastafilata), their surfaces are sandblasted with preferably virgin white corundum powder having a granulometry of about 180 mesh. Surprisingly, surfaces so treated are non-stick for the purposes mentioned above.

The apparatus comprises a kneading channel slanting downwards from an upstream inlet end, which is open to receive curd to be kneaded, to a downstream outlet end, which is open to unload the curd. A pair of opposed augers are pivotally supported side-by-side in the kneading channel and are operatively connected to motor elements for rotating in opposite directions and moving the curd to the downstream end. First stem blowing elements are open to the kneading channel. A kneading chamber with plunger arms is arranged at the outlet end of the kneading channel for receiving the curd unloaded from the channel.

An apparatus is described, for the characterisation of pigmented skin lesions, which includes an instrument for the acquisition of a plurality of images of the lesion, filmed with lighting at different wavelengths, a device designed to segment and parameterise each of the images, a device designed to extrapolate a data set from the images and input the data set into a neural network system, a device designed to compare the results processed by the neural network with the results obtained following similar processing of known cases, and a device designed to vary the weighting of each parameter supplied to the neural network on the basis of the results.

A flattening roller (38) is supported on horizontal guides (32, 34) and rolls alternately in opposite directions along the guides. A tray (30) is arranged horizontally between the guides, and is progressively lifted to approach to the cylindrical surface of the roller. The tray turns by a quarter turn around a vertical axis at the end of each stroke of the roller along the guides. A lump of dough placed on the tray is progressively flattened to a thin, round shape.

A frame (10) carries horizontal, parallel, journaled, cylindrical bearings (26, 28), upon which rotatably rests the cylindrical external surface a wheel (30) having, on its outside periphery, ports (44) communicating with respective moulds (45) which are radially arranged side by side in the wheel. Plungers (46) are slidably received in the moulds. Feeder (52) stationary with respect to the wheel (30) deliver pasta filata into at least one of the ports. Ejectors (48, 50) stationary with respect to the wheel (30) eject pasta filata from at least one of said moulds (45) through its associate port. A motor (42, 43) with transmission (38, 40, 41) moves said wheel (30) in steps corresponding to the interval between two successive ports along the periphery of the wheel. Jets (66) sprinkle the moulds with chilled water.

The curd ripening apparatus comprises two perforated, semicylindrical baskets (12, 30), rotatably supported on a common horizontal axis, one within the other. Curds are poured into the inside basket, and the outside basket is then rotated of 180.degree. with respect to the other and is latched with latching means (26, 28, 40) to make it integral with the other basket (12, 24) in an angular position opposite to it, so that a closed barrel is formed. One or two motors (36, 38; 136, 138) can rotate both baskets together, so that the curds are rolled until ripe. The inside basket is preferably provided with internal, parallel, transverse blades (42).

A curd mixer for making cottage cheese, comprising a horizontally arranged screw conveyor for feeding curds to a disk cutter for slicing the curds with the addition of hot water, a drop chamber adjacent to and beneath the disk cutter, permitting the sliced curds to drop onto the inlet end of a pair of juxtaposed horizontal screw conveyors mounted for rotation in opposite directions for feeding the sliced curds and water to an oval inlet opening of an elongated mixing basin in which a pair of cooperating plunger arms each supporting a horizontal mixer comb is arranged to exert on the paste of curds and water a mixing action by moving the paste from the longitudinal outer sides of the basin to the center thereof and then upwardly. The mixed paste of curds leaves the mixing basin through an overflow spout for further treatment. Whey formed during mixing is drawn off from the mixing basin by a whey extraction pump. The horizontal arrangement of the conveyor screws avoids excessive compression of the curds and prevents them from becoming too dry.
