An apparatus and method for shaping and molding material having two sidewalls, two end walls, a bottom and at least one partition. The two sidewalls have grooves spaced at predetermined intervals on an inside surface for receiving a partition and a bottom ledge for retaining the bottom. The inside surface has a plurality of openings sized for receiving holding members and may have a variety of shapes. The bottom is shaped to mate with the shape of the inside surface of the sidewalls. The two end walls include locking mechanisms for holding the various components of the apparatus together.

A food product is portioned without having to saw through deep frozen bodies by forming a flat slab or plate of the nonfrozen food product and then cooling the product to a temperature at which it is stampable, e.g. null1null C. to null10null C. The slab is then stamped by a stamping grid on a ram or roll to form the individual portions which can then be deep frozen and may be breaded prior to being deep frozen.

A method of and an apparatus for producing endless rolls of a resilient foodstuff, as well as a product in the form of a roll of hard cheese is provided. The method comprises supplying a layer (7) of the resilient foodstuff in a supply plane and against first guide means (20, 120), continuously deflecting the resilient foodstuff layer (7) by way of the first guide means (20, 120) away from the supply plane, and continuously re-directing the deflected foodstuff layer (7) by way of second guide means (30, 130) toward the supply plane, so as to produce a roll of foodstuff; the apparatus comprises supply means (5) for supplying a layer (7) of the resilient foodstuff in a supply plane, first guide means (20, 120) against which the resilient foodstuff layer (7) can be supplied and for continuously deflecting the foodstuff layer away from the supply plane, and second guide means (30, 130) for continuously re-directing the deflected foodstuff layer (7) toward the supply plane.

IMPROVEMENTS APPLIED TO CONTINUOUS LINEAR SQUARE-FITTING MACHINE USED IN THE MILLING PROCESS OF COCONUT ENDOCARP (Cocos Nucifera L.), continuous linear square-fitting machine (1), particularly applied to the milling process of coconut endocarps, which were processed by a slicer machine (A), producing threads (F) which are led to the deposit (2) of the square-fitting machine (1) through the rolling conveyor belt (T); square-fitting machine (1) featured by being comprised by a metal structure (3) where a conveyor fixing system (SF) of threads (F) is installed through fixing conveyor chains (4) and a cutting system (SC) by circular saws (5); through the motor reducer set (6) and secondary transmission chains (7), the axes (8) rotate on bearings (9) making the fixing conveyor chains (4), mechanic or manually put into motion, to lead the threads (F) to the cutting system of the circular saws (5); before the tablets (F) passing through the first saw (5a), they are downwards compressed by a set of straps (10) and pulleys (12), guiding said threads to be exactly placed on the square; arrangement which is made possible due to the distribution of teeth (13), positioned in a spaced way and at 90null towards the chains (4).

Method and apparatus for forming a shaped meat product by cutting under compression. Male and female die assemblies carried by dual conveyers are loaded with meat components and brought together in compression to define a die. The assemblies are formed with arrays of blade receiving slits and are conveyor transported to a cutting station. At the station, carriage mounted dynamic blades are maneuvered into the slits from the outward sides of the die assemblies to form any of a broad variety of geometric-shaped meat products.

A method and apparatus for marking, imprinting or applying a pattern, design or mark to a plurality of individual pieces of food product to be divided from a sheet of food product is described. In one aspect of the invention, a method may include the steps of supplying a sheet of food product, marking the plurality of individual pieces of food product to be divided from the sheet of food product, and dividing, at least partially, the individual pieces of food product from the sheet of food product. In another aspect of the present invention, an apparatus may generally include a support frame, a cutting plate, and a marking head. The cutting plate preferably includes a plurality of cutting openings and an engagement surface capable of supporting and positioning a sheet of food product. The cutting openings preferably correspond to a plurality of individual pieces of food product to be divided from the sheet of food product.

The invention relates to a method for the continuous preparation of pellets intended for the production of crusty and honeycombed snack-type food products from a natural starchy raw material having a starch content that is equal to or greater than 60% and a protein content below 13%. According to the invention, the raw material is preconditioned; said raw material is fed continuously into an extrusion machine with two co-rotary and co-penetrating screws; a supply and transport step, a cooking step, a degassing step and a cooling step are performed in the extrusion machine; a continuous bead of cooked dough having a moisture content of between 20 and 30% is formed; the dough is oriented in a vertical direction and pushed through a multiple-outlet mould to form several continuous beads; the beads are cut transversely to form pellets. The pellets are subsequently dried to produce pellets having a moisture content of between 10 and 12%. The invention also relates to an installation for the continuous preparation of pellets.

A method of creating curved sausage links involves extruding an elongated sausage strand having linear protein fibers therein out of an elongated hollow meat emulsion extrusion tube. The flow of meat emulsion through the tube is partially restricted by a restrictor element within the tube which permits a portion of the meat emulsion to pass thereover in a substantially uninterrupted manner, but which requires a separate layer of meat emulsion to have its movement through the tube inhibited by engaging the restrictor element and having to move thereover to exit the tube. When the sausage strand is subjected to heat, the uninterrupted portion is inclined to have more lengthwise shrinkage in the presence of heat than the other layer, thus causing the sausage link to assume a curved configuration. The machine for practicing this method has a stuffing tube with the restrictor element therein as described heretofore.
