A blancher having multiple cooling zones formed by a tank having multiple compartments for receiving a heating liquid in one compartment and a coolant in at least two other compartments. In a preferred embodiment, the tank has a sidewall with an end wall at its inlet end, an end wall at its discharge end, and a pair of dividing baffles which separate the tank into compartments. Received within the tank is a food transport mechanism that preferably is a helical auger having a portion in each compartment to urge food product toward the discharge end. Preferably, a liquid hot enough to cook or blanch food product is received in the inlet end compartment and a liquid cold enough to cool the food product is received in the discharge end compartment. To precool the food product after it has been heated, a precooling liquid preferably is received in a compartment between the inlet end and outlet end compartments. Preferably, water at a temperature of between 55.degree. Fahrenheit and 75.degree. Fahrenheit is received in the precooling compartment and water at a temperature of between 32.degree. Fahrenheit and 55.degree. Fahrenheit is received in the cooling compartment. Preferably, each of the cooling compartments can be constructed having cooling water inlets and outlets that produce a coolant flow opposite the direction of food product flow creating a counterflow heat exchanging arrangement. Preferably, at least some of the coolant supplied to the precooling compartment is well or ground water for saving energy and money.

At least one jet (15) is arranged between the tank floor and the grid, said jet being adapted to eject liquid in a generally upward direction, and said jet during the ejection being moved so as to vary the flow pattern inside the tank. The present invention is a sterilizing apparatus for continuously sterilizing foods, medicines, chemicals, etc. in the manufacture of those products. A hot water storage vessel and a cooling water storage vessel are mounted within a pressure tank, and such products passes through the hot water storage vessel while being carried by chain and are thereby sterilized. The hot water storage vessel is covered with an outer frame assembly and a heat insulating material is inserted therebetween to minimize heat loss. Further, the bearings for supporting the rotating shaft of sprockets which guide the movement of the chain are attached not to the hot water storage vessel but to the outer frame assembly to prevent the bearings from being changed in position or distorted by heat, thereby assuring a smooth rotation of the sprockets.

Method and apparatus for continuously processing filled containers with liquid heat treatment mediums maintained under superatmospheric pressure by an overriding air pressure. A minimum of liquid is used during processing with the liquid level being maintained above the containers at all times. The liquid is controllably circulated through container filled tunnels defined within carts, from one end of the tunnel to the other, to assure equal heat treatment of all containers in the batch of containers in each tunnel. The carts may either be non-agitating or agitating carts. One embodiment of the continuous pressure cooker and cooler includes a pressure vessel having two pressure locks to provide a pressure cooking chamber with high pressure cooling being performed in a mini-cooler defined by the outlet pressure lock followed by additional atmospheric cooling. Another embodiment of the invention comprises three pressure lock means to positively divide the pressure vessel into cooking and cooling chambers; and a third embodiment substitutes a plurality of baffles for the intermediate pressure lock thereby effectively dividing the pressure vessel into a cooking chamber and cooling chamber.

A rotary conveying apparatus comprising a plurality of rails for supporting and conveying cup-shaped cylindrical articles on a cushion of fluid during their translatory movement from the inlet ends to the outlet ends of the rails. The apparatus incorporates a framework on which a plurality of the rails are mounted in longitudinally extending spaced substantially parallel relationship, with the inlet and outlet ends thereof arranged in a circular pattern at equal circumferentially spaced increments therearound. Each of the rails is formed with a plurality of cavities or ports in a supporting surface thereof, through which a fluid such as air is discharged against the surface of an article in a manner to support the article on a cushion of fluid in spaced relationship from the supporting surface. The rotary conveying device is continuously or intermittently rotated and transfer means are provided for transferring articles into the inlet ends of the rails in a sequential ordered sequence and receiving means are provided for receiving articles discharged from the outlet ends of the rails in a sequential ordered sequence. The articles, during conveyance along the rails between the inlet and outlet ends, can be subjected to one or a plurality of treatments such as, for example, a drying or curing of decorative coatings on the surfaces of the articles.
