    摘要: The invention relates to a method for preserving Agaricus bisporus mushrooms, other Agaricus spp. mushrooms, or other mushrooms that lose more than 15 wt % upon blanching, wherein optionally a relatively small amount (relative to the amount of fresh mushrooms) of additional ingredients is used, comprising the following consecutive steps: (a) Inserting clean fresh mushrooms in a plastic laminate bag; (b) Subjecting the bag with mushrooms to vacuum at a pressure of about 300 mbar or less; (c) Sealing the bag while keeping the vacuum; (d) Releasing the vacuum, and (e) Treating the bag with mushrooms at a temperature of about 60° C. or more. In this way a commonly used blanching step—applied before packaging—is excluded, by virtue of which energy is saved and the taste and nutritional value is improved. Thus, the mushrooms are of excellent quality with good taste and flavor and well preserved.

Where a liquid is discharged, it preferably is discharged at a flow rate of at least 20 gpm and at least 30 psi. Where a gas is discharged, it is discharged at a flow rate of at least 60 CFM at a pressure of at least 2 psi or at a flow rate of at least 10 CFM at a pressure of at least 80 psi. If desired, discharged fluid can be recirculated to save energy. To help increase agitation and help break up clumps of food products in the blancher, direct-contact mechanical agitation devices, such as baffles, can be used. Such a blancher and method can be used to process food product by blanching, cooking and pasteurizing, is suited for processing relatively heavy food products having a density of at least 55 lbs/ft3 using discharged liquid and gas, and is suited for processing food products having a lesser density using only discharged gas.

The conveyor belt may include a plurality of tablets composed of a stone-like material attached to a stainless steel linking assembly, or alternatively, a drive chain. Infrared radiation heat sources are provided above and below the conveyor belt. Food passing through the oven on the conveyor belt is cooked by heat transferred directly from radiant heat sources. Cooking is also facilitated by heating stone-like tablets of the conveyor belt with infrared heat sources inserted inside the conveyor belt loop. Heat is transferred from the tablets to the food items, producing superior qualities in the cooked food. Waste heat is reduced by providing a means for automatic control of the heating elements.

    摘要: An energy efficient method of sterilizing canned food in a sterilizing kettle comprises the use of 95.degree. C. hot water, which is kept in a first reservoir, to expel the air in a sterilizing kettle containing the canned food to be sterilized and to preheat the kettle and the canned food. The 95.degree. C. hot water is cooled to become 85.degree. C. hot water, which is then drained out of the kettle to be kept in a second reservoir. Thereafter, steam is injected into the kettle to sterilize the canned food. The 85.degree. C. hot water kept in the second reservoir is then introduced into the kettle in which the 85.degree. C. hot water is converted by a heat exchange to the 95.degree. C. hot water, which is then drained and kept in the first reservoir for use again in the next sterilization cycle.
