A spacer assembly for half steam table trays includes a grid-like framework upon which are mounted a plurality of non-metallic support pads adapted to accept the corners of adjacent trays laid thereon in a rectangular pattern. The framework is fabricated of a light metal functioning structurally only to position the support pads. A spacer assembly is laid atop each succeeding layer of trays and the tray corners are compressed a predetermined amount until the pads in a vertical column are in contact, whereby the pads bear the load of the trays stacked thereabove.

Method for continuously processing filled containers with liquid heat treatment mediums maintained under superatmospheric pressure by an overriding air pressure. A minimum of liquid is used during processing with the liquid level being maintained above the containers at all times. The liquid is controllably circulated through container filled tunnels defined within carts, from one end of the tunnel to the other, to assure equal heat treatment of all containers in the batch of containers in each tunnel. The carts may either be non-agitating or agitating carts. One embodiment of the continuous pressure cooker and cooler includes a pressure vessel having two pressure locks to provide a pressure cooking chamber with high pressure cooling being performed in a mini-cooler defined by the outlet pressure lock followed by additional atmospheric cooling. Another embodiment of the invention comprises three pressure lock means to positively divide the pressure vessel into cooking and cooling chambers; and a third embodiment substitutes a plurality of baffles for the intermediate pressure lock thereby effectively dividing the pressure vessel into a cooking chamber and cooling chamber.

The invention relates to a method for sterilising products, especially found products and the raw materials, auxiliary products and semi-finished products thereof, in additions to raw materials, adjuvants and Intermediaries for the pharmaceutical and cosmetic industry. The products which are separated by sorting are placed, in product-dependent layer thicknesses. In a process container (3), after being possibly separated and/or sieved. The process container (3) guarantees identical treatment conditions for the entire product load, with the aim of achieving homogeneous product quality. The process container is introduced into a pressure chamber (7) in which the actual sterilisation process is controlled by a programme and runs homogeneously. The process container is removed from the pressure chamber (7), the product is then removed from the precess container, before or after being cooled to a pre-determined temperature, and is optionally brought back to its original form by means of a mechanical aftertreatment before being placed in the delivery container and/or being further processed. The invention thus enables the surface of products, especially natural dry products, to be sterilised and disinfected in an homogeneous and reproducible manner without causing any unwanted change in the sensory, physiological and chemical product properties.

The retort employs a power cylinder to tilt the retort and thus the storage racks to enable inclination of the racks to facilitate the loading and tilting of the racks to facilitate unloading. In addition, a hexagonal pattern of can rack clusters is provided to enhance cooking capacity of cans.
