    摘要: Chewing gum products containing maltodextrin and methods of making such gum products are disclosed. In one embodiment, aspartame is used to sweeten the gum composition, and maltodextrin is provided in an amount effective to stabilize the aspartame such that after six weeks of storage at 85.degree. F., at least 5% less aspartame decomposes than would have decomposed if the maltodextrin were not included. In another embodiment, a maltodextrin which has been purified to remove fermentable components is used in chewing gum.

    摘要: The present invention includes a method for producing a chewing gum with a modified release sweetener selected from the group of N-substituted derivatives of aspartame, particularly neotame, as well as the chewing gum so produced. The modified release neotame or other N-substituted derivative of aspartame sweetener is obtained by physically modifying the sweetener properties by coating and drying. Neotame or another N-substituted derivative of aspartame sweetener is coated by encapsulation, partially coated by agglomeration, entrapped by absorption or extrusion, or treated by multiple steps of encapsulation, agglomeration, absorption, or extrusion. The coated sweetener is then co-dried and particle sized to produce a release-modified high-intensity sweetener. When incorporated into the chewing gum, these particles are adapted to enhance the shelf stability of the sweetener and/or produce a modified release when the gum is chewed.

    摘要: Chewing gum containing Alitame and a high level of lecithin has surprisingly been found to provide chewing gum with a delayed release of the Alitame. The gum composition includes about 5% to about 95% gum base, about 10% to about 90% bulking agent, a sweetening amount of Alitame, and lecithin in an amount effective to delay the release of the Alitame such that at least a 15% decrease in Alitame release rate is achieved compared to the release rate of the same formula without lecithin.

    摘要: A method of making zein coated, high-potency sweeteners or other gum ingredients that does not use alcohol is disclosed. A solution of zein and water at a pH of between about 11.5 and about 12.1 is prepared, containing between about 1% and about 25% by weight zein, and the aqueous zein solution is combined with a high-potency sweetener or other gum ingredients to form a zein-coated ingredient. The zein coated ingredient is then used to make chewing gum. Preferable coating steps include spray drying and fluid bed coating.
