In various aspects, the disclosed sweetener compositions comprise a sweetening agent and a taste modulator component. The taste modulator component improves key properties associated with many sweetening agents, including maximal sweetness response; mitigates flavor profile issues such as bitter and/or licorice-like off-tastes; improves sweetness onset rate and lingering sweet aftertaste properties; improves desensitization/adaptation profile issues; and improves body/mouthfeel characteristics. Glucosyl stevia compositions are prepared from steviol glycosides of Stevia rebaudiana Bertoni. The glucosylation was performed by cyclodextrin glucanotransferase using the starch as source of glucose residues. The compositions mainly comprise glucosyl derivatives with superior taste characteristics and can be used as sweetness enhancers, flavor enhancers and sweeteners in foods, beverages, cosmetics and pharmaceuticals.

Those reduced calorie consumable items have taste characteristics similar to those of full calorie items. Such reduced calorie consumables may include a combination of sweeteners that provides a taste similar to natural sugars and alleviates many of the negative attributes commonly associated with other reduced calorie consumables. The sweetener combination may include the high potency sweeteners aspartame and acesulfame potassium used with one or more natural sweeteners. Natural sweeteners may include fructose and an extract derived from plants of the species Stevia rebaudiana Bertoni, substantially purified in the component rebaudioside A.
