摘要: Compositions and methods that stimulate body protein synthesis and can improve muscle mass maintenance and recovery are provided. The composition comprises (i) a protein source which provides at least about 8% total calories of the composition and which includes at least about 50% by weight of whey protein; (ii) a lipid source having an omega 3:6 fatty acid ratio of about 5:1 to about 10:1 and which provides at least about 18% total calories of the composition; (iii) a carbohydrate source; and (iv) a balanced macronutrient profile comprising at least vitamin E and vitamin C.

摘要: The subject of the invention is the use of a protein material whose rate of digestion has been reduced, for the preparation of an enteral composition which makes it possible to modulate the postprandial plasma amino acid level, said protein material having been previously treated so as to convert the fast-digesting proteins which it contains to slow-digesting proteins, characterized in that the slow-digesting protein material is a material containing microparticulate gelled proteins combined with polysaccharides under conditions of thermodynamic incompatibility.

摘要: The invention thus relates to a method for accelerating the rate of digestion of a protein matter, in which a protein matter is treated with transglutaminase, and it is mixed with anionic polysaccharides. The invention also relates to the use of the rapidly digested protein matter for preparing a food or pharmaceutical composition intended for oral administration to a mammal, to induce a postprandial peak of plasmatic increase in amino acids. This composition is intended for modulating the postprandial protein gain, limiting the problems linked to gastrointestinal motility disorders, limiting the postprandial sensations of nausea in pregnant women, and/or limiting the postprandial risks of regurgitation and/or gastro-esophageal reflux. Finally, a subject of the invention is also a food or pharmaceutical composition comprising anionic polysaccharides and a protein matter treated with transglutaminase.
