AN AQUEOUS HOMOGENIZED SLURRY OF SOYBEAN PARTICLES IS SUBJECTED TO A SEPARATION SO AS T SEPARATE INSOLUBLE MATERIALS FROM LIQUID AND THE LIQUID IS SUBJECTED TO REVERSE OSMOSIS TO OBTAIN AS A RETENTATE SOY PROTEINS INCLUDING BOTH THOSE WHICH ARE INSOLUBLE AND SOLUBLE IN WATER AT THE PROTEIN ISOELECTRIC POINT.
Abstract:
STARCH IS SUBJECTED TO HYDROLYSIS WITH AN ACID TO CONVERT THE STARCH TO HYDROLYZATE PRODUCT WHICH IS THEN FRACTIONATED UNDER APPLIED PRESSURE BY MEANS OF MEMBRANE SEPARATION TO RECOVER A LOWER CONVERSION PRODUCT AND A HIGHER CONVERSION PRODUCT.
Abstract:
Low conversion starch hydrolyzate products having dextrose equivalent values not substantially above 18 and characterized by a unique saccharide composition, good clarity and little tendency of retrogradation in solution. Methods for preparing low conversion starch hydrolyzates by a two-stage hydrolysis; hydrolysis in the first stage being carried out with acids or enzymes at elevated temperatures for short periods to achieve liquefaction of the starch with very little dextrinization or saccharification and the second stage of the hydrolysis being carried out at an alkaline pH with bacterial alpha-amylase to achieve a desired dextrose equivalent value.

THINNING OF DERIVATIZED STARCH IS ACCOMPLISHED WITH THE USE OF HYDROGEN PEROXIDE UNDER ALKALINE CONDITIONS REQUIRED FOR THE DERIVATIZATION. THE TEMPERATURE AT WHICH THINING OF DERIVATIZED STARCHES IS ACCOMPLISHED WITH THE USE OF HYDROGEN PEROXIDE IS IN THE RANGE OF 80* TO 130*F. AND AT A PH IN THE RANGE OF 7.0 TO 12.0. A CATALYTIC MATERIAL SUCH AS COPPER ION IS USED IN THE AMOUNT OF 5 PARTS TO 100 PARTS PER MILLION BASED ON THE WEIGHT OF STARCH TO ASSIST THE THINNING ACTION OFTHE HYDROGEN PEROXIDE.
