A conveyor for moving the strand from a sausage making machine has J-hooks extending downwardly from a continuous chain conveyor. The conveyor picks up the loops of the strand at a loading station immediately adjacent the discharge end of the machine, and conveys the loops to a processing station for smoking or the like. The conveyor then moves the loops to an unloading station for removal of the strand from the conveyor, whereupon the conveyor downstream of the unloading station returns to the loading station to pick up additional product. A meat encasing machine has a looper horn, linking chain and conveyor which, prior to production, have home positions which are determined. A pulsed signal is generated as the looper horn rotates and is transmitted to an amplifier from an encoder on the servo motor for the looper horn and the conveyor. The output pulse signal is then reduced in frequency so that it can be read by a PLC. The PLC counts the pulses in the signal and can determine the relative position of the looper horn based on the count and can therefore minimize the rotation of the looper horn in the home position at the beginning of each new cycle. The meat encasing machine may also be controlled such that the linking chain, looper, and conveyor have no direct mechanical or electrical interaction between each other. By driving the components with separate servo motors, each can be precisely controlled in the desired ratios with respect to each other.

A horizontal conveyor for linked sausage strands has a frame (10) having a horizontal operating platform (12) with opposite first (16) and second ends (18), opposite sides, a top surface (20), and a continuous perimeter wall (14) extending along the sides and first and second ends. The perimeter wall (14) is substantially semi-circular at the first end (16); and has a substantially parallel side portions at a midsection; and has end portions that converge towards each other from the side portions to meet at a semi-circular end portion (18A) at the second end (18). A channel (24) is located in the top portion in uniform inwardly spaced relation to the perimeter wall, and a continuous conveyor chain (26) is in the channel. A plurality of spaced hook members (28) are secured to the conveyor chain and have a shank (30) slidably engaging the top of the perimeter wall, and a hook portion extends downwardly and outwardly with respect to the perimeter wall. The semi-circular end portion of the second end (18) of the platform comprises a sausage loading station and has a diameter less than the distance between the side portions of the perimeter wall so that the hook portions of the hook members sliding over such end portion will travel at a speed greater than the speed of the hook members sliding over the side portions of the perimeter wall.

The machine for skinning meat has a frame, an input conveyor, a gripper roll, a skinning blade assembly comprising a shoe with a skinning blade thereon, a hold down roll to apply downward pressure on a meat product to be skinned, and an outlet conveyor. The skinning blade assembly is supported on a pair of control arms that can be selectively positioned by cam elements to place the blade assembly in a desired position with respect to the gripping roll. A pair of sensor controlled air cylinders are secured to the control arms to move the blade skinning assembly with respect to the gripping roll. A cam controls the attitude of the blade gripping assembly as it is moved with respect to the gripping roll. The hold down roll is mounted on a pair of arms which are also controlled by a pair of sensor controlled air cylinders. The arms of the held down roll are linked to the control arms so that the hold down roll and the blade skinning assembly can be moved together wherein the hold down roll will not ever engage or encounter the gripping roll or the skinning blade assembly.

A method for removing a portion of fat from meat cuts involves placing a meat cut on a longitudinal conveyor, pressing sensor probes into the meat cut to measure the relative thickness of fact and the location of lean in the meat, and then withdrawing the sensor probes from the meat. An electronic signal is transmitted from the sensor to a controller along with an encoder signal to determine the depth from the outer lower surface of the meat cut through a layer of fat in the meat to a layer of lean in the meat. Data taken from the foregoing step determine the desired position of the blade. A predetermined amount of fat is thereupon cut from the meat cut by the blade. An apparatus for removing a portion of fact from meat cuts includes a frame and at least one sensor probe including fiber optics to permit scanning of the interior of a meat cut penetrated by the probe. Power for moving the probe into the meat is mounted on the frame along with a skinning blade mounted in a path of movement of a meat cut on the frame. A controller on the frame takes data from the sensor probe and determines the linear depth of fat material on the meat cut and lean material in the meat cut. The controller then determines the operating position of the blade and positions the blade to effect the removal of the desired amount of fat.
