    摘要： A method for preparing dried flaked textured high vegetable protein which instantly hydrates a portion content of 30 percent or more, and has an improved flavor. The process includes texturizing vegetable protein material by subjecting such vegetable protein material containing moisture to a pressure of at least 1,800 pounds per square inch for a time and at a temperature sufficient to convert said moisture into steam whereby such vegetable protein material is partially disembittered, toasted without scorching and is compacted into a hard and substantially fused mass having textured characteristics. The fused mass is fragmented into particles. The textured vegetable protein material is sized so that the retained portion of the textured vegetable protein material has a particle size between one inch and 0.0469 inch. The retained portion or fraction of the sized textured vegetable protein material is hydrated by adding enough water to raise the moisture content of the textured vegetable protein material to between 12 and 25 percent. The hydration is achieved at a temperature of 0.degree. to 250.degree. F. under a pressure from atmospheric to 15 p.s.i. for a period of 3 to 24 hours. The hydrated textured vegetable protein material is flaked in flaking rolls. The flaking rolls are adjusted to produce flakes having a thickness of 0.06 to 0.001 inch and a bulk density of 9 to 37 pounds per cubic foot. The flaking rolls have a roll surface temperature which is either cold, ambient or hot. The flaked textured vegetable protein material is dried by reducing the moisture content of the flaked textured vegetable protein material to as low as 2 percent. The drying is done by heating the flaked textured vegetable protein at a temperature of 90.degree. to 500.degree. F. for 20 seconds to 24 hours. The dried flaked textured vegetable protein material has a bulk density of 7 to 30 pounds per cubic foot. The dried flakes can be used in various food compositions.

    摘要： A chewy, semi-plastic, non-extruded, non-porous, microbiologically-stable dog food which includes: 12 to about 30 weight percent, based upon the total weight of the dog food, of gelatin; at least one acidulant; at least one cereal starch-containing textural agent; at least one release agent; at least one taste agent; at least one sugar; salt; and added water. The dog food is in a molded form. The dog food has a pH of about 3 to 5, and has a moisture content of about 10 to about 25 weight percent, based upon the weight of the dog food. The process for preparing the dog food includes: (a) mixing the dry components and liquid components with low speed agitation and continuing the mixing until a dough is obtained; (b) forming the dough by molding or rotary molding into molded snack or biscuit; (c) conditioning the molded dough at 185.degree. to 200.degree. F. for about 7 to 8 minutes; and (d) packaging the molded dog snack or biscuit in a protective package.

    摘要： Baked goods comprising a base portion and a filling or upper portion are prepared by applying the filling or upper portion dough to the base portion so that the filling or dough penetrates grooves in the dough of the base portion, then is baked in place to cause the two portions to adhere and bond together. A pet egg treat embodiment has the general shape of a longitudinal or transverse slice of hard-boiled egg. The yolk portion contains egg yolk solids, while the outer egg-shaped portion contains flour, egg solids and any type of nutritious meal, including meat meal or the like. The treat is hard and helps to clean pets' teeth and gums, and provides chewing exercise for pets. The product preferably has the appearance of a slice of a hard-boiled egg.
