This invention provides novel cyclic acetals useful as delayed release flavorants and odorants having the general formula: ##STR1## These compounds possess no detectable flavor or odor themselves at normal temperatures and atmospheric conditions but release an aldehyde flavorant upon heating at higher temperatures. The novel cyclic acetals of the present invention may be used as flavorants in tobacco compositions or tobacco substitutes, as sustained flavorants and odorants to mask or enhance the flavors and odors of burning tobacco products, as flavor additives to microwaveable foods, and in the preparation of chewing gums.

The flavoring compositions and flavored comestibles of this invention include alkyl 2,3-dihydro-3(1'-hydroxyalkylidene)-2-oxo-5-alkylfuran-4-carboxylates in amounts capable of significantly enhancing the flavor of the flavoring compositions or flavored comestibles. For example, butterscotch flavors are materially improved in smoothness and certain fruit flavors are given greater richness and ripeness when the carboxylates of this invention are incorporated therein. Similarly, fruit flavored carbonated soft drinks which include the carboxylates possess enhanced flavors.

Novel bicyclic ketones having the structure: ##STR1## wherein R is a C.sub.1 -C.sub.5 alkyl group, either straight-chain or branched, and saturated analogs have been prepared. These compounds exhibit floral and woody odors and/or desirable flavor properties, and are useful as fragrance and/or flavor materials. The compounds are conveniently prepared from alkylidene cyclopentanones by Michael addition with alkyl metalloacetoacetates and subsequent decarboxylative cyclization of the adducts. The saturated analogs may then be prepared by hydrogenation.
