There is provided methods for producing crystalline maltitol without using seed crystals, with good workability, at low costs, and with efficiency in a short time. One of the methods comprises the steps of feeding a first maltitol aqueous solution to a kneader so as to knead and cool it, then feeding a second maltitol aqueous solution having a high solid content in place of the first maltitol aqueous solution and further kneading and cooling the resulting mixture so as to produce a plastic mass, cooling the plastic mass so as to solidify it, and pulverizing the solidified mass. The other method comprises the steps of feeding a maltitol aqueous solution to a kneader so as to knead and cool it, then adding water and further kneading and cooling the mixture so as to produce a plastic mass, cooling the plastic mass so as to solidify it, and pulverizing the solidified mass.

A crystalline mixture solid composition which has almost no hygroscopicity, is easy to handle and dissolve and hardly worn by abrasion, and comprises &agr;-D-glucopyranosyl-1,1-mannitol and &agr;-D-glucopyranosyl-1,6-sorbitol and may further comprise &agr;-D-glucopyranosyl-1,1-sorbitol in a certain case is obtained in an extremely short period of time by a power-saving and labor-saving process with a small-scale apparatus. A composition which comprises 20 to 75 wt % of &agr;-D-glucopyranosyl-1,1-mannitol, 23 to 70 wt % of &agr;-D-glucopyranosyl-1,6-sorbitol and 2 to 25 wt % of &agr;-D-glucopyranosyl-1,1-sorbitol and is in a crystalline mixture solid state or has a specific surface area of 0.07 to 0.1 m2/g, and a composition which comprises 30 to 75 wt % of &agr;-D-glucopyranosyl-l,1-mannitol, 25 to 70 wt % of &agr;-D-glucopyranosyl-1,6-sorbitol and has a specific surface area of 0.07 to 0.1 m2/g. The above compositions are produced by a process comprising supplying a raw material, which is obtained by optionally removing trehalulose from a mixture containing isomaltulose and trehalulose produced from cane sugar through an isomerization reaction and hydrogenating into a kneader having a thin and long cooling zone together with seed crystals and discharging the obtained composition from an outlet continuously.

The above crystalline mixture solid composition is produced by mixing a hydrophilic solvent with a solid composition or aqueous solution comprising 50 to 80 wt % of GPM, 1 to 50 wt % of GPS-6 and 0.01 to 20 wt % of GPS-1, separating solid matter from a liquid, and removing water and the solvent from the solid matter and can be obtained as a thin scale crystal.

Provided is a method for manufacturing crystalline isomaltulose from sucrose, comprising the steps of: 1) contacting an α-glucosyltransferase enzyme to aqueous sucrose solution or slurry under the condition wherein the α-glucosyltransferase enzyme is active; in which said condition is maintained after the concentration of isomaltulose in the reaction mixture reaches the point at which crystals are formed, and 2) separating the reaction mixture into crystalline isomaltulose and remaining syrup. According to the present invention, enzymatic conversion of sucrose and crystallization of isomaltulose are carried out simultaneously in a same reaction vessel. In addition, the enzyme can be used repeatedly.
