A system to make a bread loaf includes means for moving continuously pans along a predetermined path, each pan including at least one cavity sized and configured for making a bread loaf. Means conditioning continuously a batch of unconditioned dough reduces the size of air pockets therein to form a conditioned dough. Means continuously extrude the batch of conditioned dough at a controlled volumetric feed rate and at a controlled pressure to provide a constant stream of conditioned dough that is continuously cut into individual packets. The entire batch is converted into individual packets of conditioned dough corresponding to a predetermined number of bread loaves to be produced from the batch, with all the packets deposited individually in cavities of the pans within 10-20 minutes after mixing ingredients that make the batch.

A press for flattening dough pieces is provided having a floor supported frame, an endless conveyor belt movably carried on the frame and presenting an upper horizontal surface, and at least one movable platen carried on the frame for pressing the dough pieces against the belt. In an embodiment, a sub frame is adjustably supported by the frame to permit leveling and adjustment of said sub frame relative to the frame. Attachment mechanisms are provided for securing the sub frame to the main frame following adjustment between the two. In an embodiment, at least two movable platens are carried on at least one of said frames, both of the platens being movable in a longitudinal horizontal direction and at least one of the platens is movable in a vertical direction. A linear actuator is drivingly connected to the two movable platens. In an embodiment, a loading system for loading dough balls onto the belt is provided. The loading system includes a transport mechanism to receive dough balls in a sequential stream and to deliver the dough balls to the belt at a speed equal to a speed of the belt. The invention is concerned with the compacting and discharging of a dough piece in and from a dough moulding machine. According to one aspect of the invention, the dough piece is passed over a fluidized bed (air-film-lubricated chute) and at the same time, it is squeezed between a pair of rollers having their axes substantially at right angles to the fluidized bed. This method of compacting, is particularly useful in the cross panning of a dough piece.A second aspect of the invention provides a method of discharging a dough piece from a dough moulder, in which it is delivered on to a downwardly inclined fluidized bed and as it leaves the bottom of the fluidized bed it falls on to a rotating discharge roller so that it is slid forwardly under the action of the discharge roller.The invention provides apparatus for carrying out both the compacting and discharge methods.

A method and an apparatus is disclosed for forming viscous and resilient food material into a globular or spherical shape by feeding such food material, in a predetermined amount, between a pair of beds. The surfaces of the beds face each other and are kept wet by capillary action, with an anti-sticking liquid. The surfaces are adjustably spaced, one from the other, so as to apply an optimal level of pressure on the food material. At least one of the beds are subjected to an eccentric rotation to produce globe-shaped viscous and resilient food material at small cost and on a large scale by making it possible to mechanically form the viscous and plastic food material into a globular or spherical shape.

A plurality of agitator rods mounted in the hopper stretch and work the dough mixture to dispel some of the gases retained therein and to fragment large, unequal sized, gas pockets and bubbles formed in the mixture into smaller, uniform sized pockets rendering the mixture soft, pliable and of a uniform texture and consistency prior to the admission of the mixture into the degassing apparatus.
